The Ultimate Do Over - [One] Restaurant Wows the Triangle

 

What are the chances that a restaurant succeeds after a do over? Slim to none? (Think Babu  from Seinfeld). Well, the owners of [One] restaurant in Meadowmont Village in Chapel Hill took their million to one shot and hit the jackpot. The addition of executive chefs Kim Floresca and Daniel Ryan elevated the cuisine and presentation to Michelin - star quality.    So what is so special? The Chef's Tasting menu (approximately 5-7 courses) is full of ambitious, flavorful compositions presented with visual elegance. The cuisine is global (with a Southern flair) with a harmony of textures and colors and the wine menu is one of the area's best. All of this has created a culinary firestorm of recognition.

 

One for One (or Two): Diners at [One] can order the Chef's Tasting menu ($50) or order an � la carte   entr�e and glass of wine. The menu also features dishes for two, including Sunburst Trout, gently cooked and flaked and completed with Trout Roe sauce and Wild Oregano. Click Here for visual images of the menu. The restaurant features an expansive, open kitchen with a 12 seat chef's counter where diners can watch the chefs Kim and Daniel at work. Advanced Pedigree: Chef's  Kim Floresca and Daniel Ryan's resume includes a combined  experience of over 26 years in the hospitality industry including positions in the most celebrated restaurants on the planet ... such as Per Se (New York), The French Laundry (Napa Valley), Alinea (Chicago) and El Bulli in Roses Spain. Wine plays an integral role with over 450 old and new world selections. Chefs Daniel and Kim work closely with the restaurant's Wine Director / Sommelier, Sean Rouch, to create pairings that complement the frequently changing menus. Cocktails also draw influences from the seasonal products but traditionalists can find their favorite cognac, small batch bourbon, and single malt scotch. Service is polished (without being pretentious) and the dessert chef will have you gushing.
