Steve Pini's enduring love affair with food started in the land of his birth, Italy's Liguria region, renowned for the quality of its produce. His tutor and inspiration was his 'Madre Grande' -- Grandmother -- who also taught him about classical dishes from other regions.
Trained at the George V Paris and Grande Hotel in Lausanne, Steve has worked for Gardner Merchant in many City institutions, building a reputation for his precise and flavourful dishes.
He became Chef Director for Searcys and worked across their high profile contracts before joining The Worshipful Company of Fishmongers as Executive Head Chef, where over the past twelve years he's helped enhance the reputation of London's outstanding Livery Halls. Today, Steve is often seen cooking and demonstrating at Billingsgate Seafood Training School.
Steve has produced two wonderful books on seafood, "The Fishmongers' Company Cook Book" and "Simply Fish". Madre Grande would be truly proud.
Look forward to some personal favourite dishes from Steve's vast collection from all over Italy such as Wild Boar with fresh Porcini Mushrooms and Polenta, and Stuffed Mussels with a Basil and Tomato sauce. Delizioso!
