Greetings!
The month of February was bountiful at Almaden Yoga. Our 3-year anniversary got us over 200 people who enjoyed each and every class. Our regular members were so understanding in letting new folks try the classes, that they either let go of their spots in the classes, or ended up practicing in the aisle of the studio.
Thank you all for coming and making it a special day for everyone.
On Feb 18th we ended our 30-day challenge and many of you completed the challenge - Sherry Weldon, Wei Martin, Darrell Martin, Lisa Allen, Mae Parrilla, Michelle Yeider, Ravi Subramanian, Avantika Sinha and Christine Noordam.

Recipe of the Month
Last month's recipe was liked by many and thank you for letting me know. I want to share dishes that Ron and I cook and relish. We both love cooking and these days I am trying a number of new dishes.
We love this hearty soup. A meal by itself. Healthy and light but filling. It takes a little prep time but then it is super easy to cook. Great comfort food for any season and the best part is that it makes enough to run a couple of meals. Store it in the refrigerator, heat and enjoy. Try it and let me know if you liked it. You can even cook this in a slow cooker all day.
Kale, Bean and Italian Sausage Soup Serves 10-12 Courtesy - Delicious Living by Whole Foods Jan 2008
1-20-ounce package precooked all natural Italian chicken or turkey sausage, sliced diagonally 1 cup chopped red onion 1 stalk celery with leaves, sliced 2 cloves garlic, minced 5 cups low-sodium stock or broth (chicken, beef or a mixture) 1.5 cups peeled, cubed potatoes 1 cup peeled, chopped carrots 1 small fennel bulb, chopped 1/2 teaspoon dried fennel seeds 2 teaspoons Italian seasoning 4 cups thinly sliced green cabbage 3 cups thinly sliced kale leaves, tough center stems removed 1 15-ounce can cannellini beans, rinsed and drained (Instead of cannellini beans I use garbanzo) 1 14.5 ounce can diced tomatoes in juice (I pick something that is roasted with garlic - just adds to the flavor) 1/2 cup freshly grated Parmesan cheese for garnish (optional) 1/4 cup fresh chopped basil leaves
- Brown sausage in a a big pan/saucepan for 5 minutes
- Add onion, celery and garlic and saute for 5-7 minutes
- Add stock or broth, potatoes, carrots, fennel, fennel seeds, Italian seasoning, salt and pepper to taste.
- Bring to boil, reduce heat and simmer covered for 35-40 minutes or until vegetables are nearly tender
- Stir in cabbage, kale, beans, and tomatoes
- Return to boil, reduce heat and simmer for 10-15 minutes
- Ladle into bowls and serve with grated Parmesan cheese and fresh basil, if using
