Fall has arrived and it's Mitten Season!
NO not kitten season...... Mitten season
I tried several times to search for pile of mittens, but all I kept getting were these adorable piles of kittens.

Minnesota Mitten Creations is returning to the
Farmers Market Annex this Saturday, October 11, 2014!
This will be the only day Lori will be at the Market this season due to her busy schedule.
Winter and the Christmas Holiday Season will be here before we know it. Stop in this Saturday and pick up those mittens and fingerless gloves
for those gifts that everyone loves. Her mittens are so warm and you should feel good about giving a gift that is handmade with repurposed fabrics.

Stop in and chat with James and Aleata over at their booth. They have some fantastic examples of what cajun cooking has to offer. Try their gumbo,
shrimp,boudin sausage, frog legs, catfish and hot link sausage. They are ready to tell you all about their passion for the foods of Louisiana and how you can give your next meal a cajun kick.

They are finally arriving!!! SoCal is receiving their fall patterns from their eco-friendly all natural canvas handbag line. Bungalow360 has released 3 new patterns for this fall/winter season and Socal will have them all. The pic on the right is showing off the barn inspired cow pattern. The other patterns to join the ranks of uber cuteness are owls and pigs. SoCal will have them in everything ranging from their little clutch purses, reversible totes, pocket bag featuring 9 pockets, travel/gym/diaper bag, small messengers, messengers, wallets and kids backpacks & hats. Stop in before the market season is over to stock up on your early Christmas shopping.

Bye Bye Glads, saying goodbye makes us so sad.
That's it folks. The last shipment of Glads for 2014 has arrived. Once they're gone, they're gone. Come by the warehouse 9-3 tomorrow or Friday, 7-1 Saturday or Sunday or tomorrow, downtown on the Mall, between 11-5 to get some.

Winter Squash Recipes

Spaghetti Squash Lasagna Bowls
 
|
Ingredients
For the roasted spaghetti squash:
- 2 small spaghetti squash, cut in half and seeded
- 1 tablespoon oil
- salt and pepper to taste
For the lasagna meat sauce:
- 1 pound ground turkey
- 1 tablespoon oil
- 1 onion, diced
- 2 cloves garlic, chopped
- 1/2 teaspoon red pepper flakes
- 1/2 teaspoon fennel seeds, crushed
- 1 (15 ounce) can crushed tomatoes
- 1 tablespoon tomato paste (optional)
- 1 teaspoon Italian seasoning or oregano
- 1 bay leaf
- 1/2 teaspoon paprika
- 1 tablespoon balsamic vinegar
- salt and pepper to taste
- 1 tablespoon basil, chopped
For the lasagna stuffed spaghetti squash:
- 1 cup low fat cottage cheese or ricotta
- 1 tablespoon basil, chopped
- 1 cup partially skim mozzarella, shredded
Directions
FOR THE ROASTED SPAGHETTI SQUASH:
- Brush the inner flesh of the spaghetti squash with oil, season with salt and pepper and roast, skin side up, in a preheated 400F oven until tender, about 30 minutes.
FOR THE LASAGNA MEAT SAUCE:
- Meanwhile, cook the turkey, about 8-10 minutes, and set aside.
- Heat the oil in a large pan over medium heat, add the onion and cook until tender, about 5-7 minutes.
- Add the garlic, red pepper flakes, and fennel and cook until fragrant, about a minute.
- Add the turkey, tomatoes, tomato paste, Italian seasoning, bay leaf, paprika, balsamic vinegar, salt and pepper, bring to a boil, reduce the heat and simmer until the spaghetti squash is cooked and then mix in the basil and remove from heat.
FOR THE LASAGNA STUFFED SPAGHETTI SQUASH:
- Fluff up some of the inside of each spaghetti squash half, divide the mixture of the cottage cheese and basil between them followed by the sauce and the cheese.
- Broil in the oven until the cheese has melted and turned a light golden brown, about 2-3 minutes.
Option: Use ground beef or Italian sausage instead of ground turkey. Option: Instead of making the sauce from scratch, use your favourite marinara or other tomato sauce. Option: Add one 2 inch piece of parmesan rind to the sauce while it simmers.
