Summer is in full swing!
 Market season is in full swing. We are just about to reach the halfway point of our season and things could not be better!! Our growers are working hard to bring you the freshest produce possible. While our Hmong growers may not understand the paperwork process to become certified organic, some of the farmers may sell 100% organic or partially organic foods simply because they do not use any chemicals ~ they didn't in their home country and they aren't using them here.  Others may offer you a choice of all natural, non-GMO, hormone-free, free-range or grass-fed foods instead.  And perhaps the best part of it all is that if you are unsure about which products are which, you can simply look our vendors in the eyes and ask them for clarification.
Be sure to stop down OFTEN, offerings from our growers change weekly. You never know what kind of awesome products you might find from our rotating variety of retail and specialty product vendors.
Annex Special Event - August 3rd
SoCal Style will be hosting their summer pet rescue event down here at the Farmers Market Annex on Sunday August 3rd from 9am - 1pm. Come down and meet some great pets that are available for adoption & interact with some wonderful folks that put their passion into helping pets big and small. We will be in the back parking lot attached to the Annex (no pets allowed in the main market area).

You will be a able to help out these rescues by buying one of their stylish shirts and sporting their message, becoming a foster (and hero), shopping their fun and funky pet centered crafts or just sharing their adoptable pets with someone in your life, that needs some company in their life. 

Vendor Spotlight

Hemp, Bamboo & Things - You can find a great assortment of natural hemp & bamboo accessories and clothing items. Recycled candy wrapper handbags, jewelry, T-shirts and pop tab purses. Swing into the booth this weekend and see what kinds of treasures you find. 
 
  
 
Tressies - These hair extensions are user friendly! They attach to your hair via a rubber bead, put in with a small hook that you are able to use on minimal hair. Show your school spirit, add in a little funk, sparkle up that dance team, add wedding colors to the hair style or make a great addition to any costume. Bruschetta is one of those elegant yet simple pleasures in life!  Take a visit to the Farmers Market this weekend to buy some fresh local food to make this delicious summer-y recipe. All the ingredients for this bruschetta dip, except the bread, can be purchased from our vendors when in season.

At the Farmers Market Annex, you can meet MN farmers face-to-face and find out exactly how they grow their wares.  While not certified "organic" (which is a paperwork process many of our Hmong growers do not understand), many offer you chemical free, partially organic, all natural, non-GMO, hormone-free, free-range or grass-fed foods instead. Zucchini Corn Pancakes

These easy pancakes are the perfect side dish or appetizer to any meal. And best of all, they don't even taste "healthy"!

Ingredients:

1 pound zucchini, grated

1/4 teaspoon garlic powder

1 teaspoon salt

Kosher salt & freshly ground black pepper, to taste

1 cup corn kernels, frozen, canned or roasted

1/2 cup shredded cheddar cheese

4 large eggs, beaten

3/4 cups all-purpose flour

1/2 teaspoon dried basil

2 tablespoons olive oil

1/2 teaspoon dried oregano


Directions:
  1. Place grated zucchini in a colander over the sink. Add salt and gently toss to combine; let sit for 10 minutes. Using a clean dish towel or cheese cloth, drain zucchini completely.
  2. In a large bowl, combine zucchini, corn, eggs, basil, oregano and garlic powder; season with salt and pepper, to taste. Stir in cheese and flour until well combined.
  3. Heat olive oil in a large skillet over medium high heat. Scoop tablespoons of batter for each pancake, flattening with a spatula, and cook until the underside is nicely golden brown, about 2 minutes. Flip and cook on the other side, about 1-2 minutes longer.
  4. Serve immediately.
Summer Vegetable Tian
The vegetables are sliced thin, seasoned only with a little salt, pepper, and thyme and then topped with just a small amount of flavorful cheese. Roasting the vegetables magnifies their flavor and gives them just a hint of sweetness. It's veggie-tastic.

Ingredients: 

1 Tbsp olive oil 

1 medium potato 

1 medium yellow onion 

1 medium tomato

1 tsp minced garlic
1 tsp dried thyme
1 medium zucchini
to taste salt & pepper

1 medium yellow squash 

1 cup shredded Italian cheese 

Directions:
  1. Preheat the oven to 400 degrees. Finely dice the onion and mince the garlic. Saute both in a skillet with olive oil until softened (about five minutes).
  2. While the onion and garlic are sauteing, thinly slice the rest of the vegetables.
  3. Spray the inside of an 8×8 square or round baking dish with non-stick spray. Spread the softened onion and garlic in the bottom of the dish. Place the thinly sliced vegetables in the baking dish vertically, in an alternating pattern. Sprinkle generously with salt, pepper, and thyme.
  4. Cover the dish with foil and bake for 30 minutes. Remove the foil, top with cheese and bake for another 15-20 minutes or until the cheese is golden brown.
