Cool Jerk Beef Jerky -  In 2010, Mali Kouanchao and Mike Davis began noticing an increasing number of their friends asking where they could find more of that delicious beef jerky that Mali's Aunt Thaipet would bring over for birthday parties and family get-togethers. This sweet and crisp jerky was Thaipet's original creation, based on traditional jerky recipes from her home country of Laos. Mali and Mike decided to fill the damand by learning to make the jerky themselves and sell it locally.

Mali soon mastered the Original flavor and began developing three other flavors with unique Southeast Asian flair: Lemongrass, Sweet & Spicy, and Native Lao Hot. A definite MUST-TRY as you come down to stock up your pantry for the week!

From July 10th:  Why Not Make the Switch to Minnesota's Local, Organic Foods This Weekend?

At the Farmers Market Annex, you can meet MN farmers face-to-face and find out exactly how they grow their wares.  While not certified "organic" (which is a paperwork process many of our Hmong growers do not understand), many offer you chemical free, partially organic, all natural, non-GMO, hormone-free, free-range or grass-fed foods instead. Read to see WHY it matters!

One Pot Farmers Market Pasta

"An easy peasy recipe that utilizes all of your great farmers market finds."

Thanks to The View from the Great Island for the picture.

Ingredients:
12 oz spaghetti
1 - 1-1/2 tsp salt & lots of fresh cracked pepper
1 medium red onion, peeled, halved, and sliced
1/2 tsp red pepper flakes (optional)
1 small Japanese eggplant, halved lengthwise and sliced
2 handfuls baby greens, I used baby kale and wild arugula
several stalks asparagus, cut in 2 inch pieces
2 Tbsp olive oil
a handful of broccoli florets, cut in half
1 cup dry white wine
2 cups cherry tomatoes, halved
3 1/2 cups water
1 colorful bell pepper, chopped
1 Tbsp white wine or sherry vinegar
2 cloves garlic peeled and minced
1 cup shredded hard Italian cheese
Directions:
1. Put everything except the cheese, into a large pot. Add the wine and water (measure exactly since you will not drain the pasta) to the pot and bring up to a boil. If your pasta doesn't fit completely into the pot, nudge it down into the water as it softens. Cover the pot while it comes to a boil then uncover and boil for about 7-9 minutes, until the pasta is just al dente. Babysit the pan a little bit to ensure that the pasta doesn't stick. Don't over cook the pasta, there will still be some water left in the pan.
2. Toss the pasta with the cheese, and serve with the extra tomatoes and lots of fresh basil.
Note:
You can use lots of different veggies for this dish, whatever looks good. Mushrooms would work well, also carrots, zucchini, cauliflower. Tomatoes are a must, though.

Vietnamese-Style Carrot and Daikon Pickles
Taste the brine before you finish the final pickles. If you like your pickles more sweet, add a few teaspoons of sugar. Personalizing these pickles to your taste will make them extra special.
Thanks to White on Rice Couple for the photo & recipe
Ingredients:

1/2 lb. carrots- julienned or cut into thin match-like strips

3 tablespoons sugar

1/2 lb. daikon radish, cut same as carrots

2 tablespoons salt

4 cups water, slightly warm enough to dissolve the salt and sugar

6 tablespoons distilled or rice vinegar

Directions:
  1. In large pitcher or large bowl, mix water, vinegar, sugar and salt till everything is dissolved and combined well.
  2. Place carrots and daikon in a clean, sterile jar and fill vinegar till jar is full.
  3. Cover jars and set in the refrigerator to pickle for about 3 days. I like my pickles to sit for at least 3 days so that the carrots and daikon become more flavorful and sour. Pickles can last for about 3 weeks in the fridge.
It's FUN!  It's Local!  It's what we're all about.
