This year's Alive at the Market fundraiser for the  Face It Foundation (support for men with depression) is proud to feature the music of former Journey singer Kevin Chalfant and former Lynyrd Skynyrd guitarist Randall Hall.  

Randall is going to rock the Market crowd with favorites such as 
Sweet Home Alabama, Simple Man, and Free Bird!

 
 Back by popular demand is Kevin Chalfant's Journey Experience! This is not a cover band but a very talented singer who actually shared the stage with Journey, replacing Steve Perry for a time. He performs all the hits that made Journey famous, creating a fun and memorable night out to dance and sing along with classic anthem favorites.  

Seriously, at last year's show it sounded just like the  
Journey from my high school days ~ absolutely incredible!

At the Farmers Market Annex, you can meet MN farmers face-to-face and find out exactly how they grow their wares.  While not certified "organic" (which is a paperwork process many of our Hmong growers do not understand), many offer you chemical free, partially organic, all natural, non-GMO, hormone-free, free-range or grass-fed foods instead. It's time to rocket your way to good health with fresh local foods from the Farmers Market Annex!  Green rocket leaves (Arugula) are actually the springtime delight rich in many important nutrients, among them are calcium, vitamin C, potassium, magnesium and iron. Learn more about these yummy greens in this week's blog.

Cool Cucumber Salsa

"A great way to use all those cucumbers you get from your plants! A little zing from the jalapeno and a burst of lime add a fresh taste to cucumbers in this refreshing fresh salsa."

INGREDIENTS:
2 medium cucumbers - peeled, seeded,
and chopped
2 medium tomatoes, chopped
1/2 cup chopped green bell pepper
1 jalapeno pepper, seeded and minced
1 small onion, chopped
1 clove garlic, minced
2 tablespoons lime juice
1 teaspoon minced fresh parsley
2 teaspoons minced fresh cilantro
1/2 teaspoon dried dill weed
1/2 teaspoon salt
1 (12 ounce) package tortilla chips
DIRECTIONS:
In a medium bowl, stir together the cucumbers, tomatoes, green pepper, jalapeno pepper, onion, garlic, lime juice, parsley, cilantro, dill, and salt. Cover and refrigerate for 1 hour. Serve with tortilla chips.
 

 

Chicken Souvlaki with Tzatziki Sauce 

"Chicken souvlaki is another word for seasoned Greek kabobs and they make a nice appetizer when dipped into homemade tzatziki sauce."

INGREDIENTS:
1/4 cup olive oil
2 tablespoons lemon juice
2 cloves garlic, minced
1 teaspoon dried oregano
1/2 teaspoon salt
1 1/2 pounds skinless, boneless chicken
breast halves - cut into bite-sized pieces

Sauce:
1 (6 ounce) container plain Greek-style 
yogurt
1/2 cucumber - peeled, seeded, and
grated
1 tablespoon olive oil
2 teaspoons white vinegar
1 clove garlic, minced
1 pinch salt
6 wooden skewers, or as needed
DIRECTIONS:
1.
Combine 1/4 cup olive oil, lemon juice, 2 cloves minced garlic, oregano, and 1/2 teaspoon salt in a large resealable bag. Add chicken, coat with the marinade, squeeze out excess air, and seal the bag. Marinate in the refrigerator for 2 hours.
2.Mix yogurt, cucumber, 1 tablespoon olive oil, vinegar, 1 clove minced garlic, and 1 pinch salt together in a bowl. Refrigerate tzatziki sauce for flavors to blend, 1 to 2 hours.
3.Preheat an outdoor grill for medium-high heat and lightly oil the grate. Soak wooden skewers in a bowl of water for about 15 minutes.
4.
Remove chicken from marinade and thread onto the soaked skewers. Discard unused marinade.
5.
Cook the skewers on the preheated grill, turning frequently until nicely browned on all sides and chicken is no longer pink in the center, about 8 minutes per side. Serve with tzatziki sauce.
