Farmers Market Annex Newsletter
July 4th 2014
Dear (Contact First Name),

As we celebrate our Independence this 4th of July lets remember all of the brave men and women who sacrifice and continue to keep us free.  Thank you!!
Annex Special Event

What do you call a night of Comedy, Music, BBQ, Grandpa's Ice Cream, a silent auction, just an outright GOOD TIME hosted by KFAN's own Dan Cole?!?

Around here, we call it Alive at the Market!

Alive at the Market Website

This year's Alive at the Market fundraiser for theFace It Foundation (support for men with depression) is proud to feature the music of former Journey singer Kevin Chalfant and former Lynyrd Skynyrd guitarist Randall Hall.

Randall is going to rock the Market crowd with favorites such as
Sweet Home Alabama, Simple Man, and Free Bird!

Back by popular demand is Kevin Chalfant's Journey Experience! This is not a cover band but a very talented singer who actually shared the stage with Journey, replacing Steve Perry for a time. He performs all the hits that made Journey famous, creating a fun and memorable night out to dance and sing along with classic anthem favorites.

Seriously, at last year's show it sounded just like the
Journey from my high school days ~ absolutely incredible!

Lightened-Up Coconut Red Velvet, Cheesecake and Blueberry Trifles

Cooking for Keeps

Cake
1 box red velvet cake mix
1 package instant vanilla pudding mix
¾ cup melted coconut oil 1 cup water
Pinch of salt 3 eggs

Cheesecake Filling

16 ounces light cream cheese, softened
6 tablespoons powdered sugar
½ cup skim milk
1 teaspoon vanilla extract

Pinch of salt

Remaining Ingredients

3 pints of blueberries

1 container frozen light whipped topping

6-8 pint sized mason jars

Instructions

  1.  Preheat the oven to 350 degrees. Grease a 13x9 baking pan.
  2. In a large mixing bowl, whisk together cake mix, pinch of salt, and pudding mix. Add eggs, coconut oil and water. Vigorously mix until combine, it's alright if there are a few lumps. Pour into prepared baking dish. Bake for 30-35 minutes or until a toothpick crumbs out with just a few scattered crumbs attached. Cool.
  3. In a medium bowl, whisk together, cream cheese, milk, powdered sugar, vanilla and pinch of salt until smooth.
  4. To build the trifles, slightly break up the cooled cake, place some cake (about 1/3 cup) in the bottom of the jar, top with a tablespoon or two of the cheesecake filling and then sprinkle blueberries on top. Repeat once more. Top with more cake and then pipe or spoon whipped topping on top

Red, White & Blue Cocktail

The Almond Eater

Ingredients

1 cup strawberries

ice
½ cup blueberries2 shots vodka
1 cup sparkling mineral water2 tsp lemon juice

½ cup sparkling flavored water (I used black raspberry but any "red" flavor would probably be good)

Instructions

  1. Muddle the strawberries in a large bowl and the blueberries in a separate, smaller bowl. If you don't own a muddler (I don't), just use a wooden spoon.
  2. Add the flavored and non-flavored sparkling water to the bowl with the strawberries; squeeze lemon juice into the bowl.
  3. Fill two cup up about ⅓ of the way with ice; divide strawberry mixture evenly among both cups.
  4. Add 1 shot of vodka per glass (optional)
  5. Last, pour blueberries evenly in both cups.
  6. Enjoy!
