Just in case you are feeling the need for that one last entertaining opportunity for the year how about a New Years Eve party? Did you skip all the stress of the holiday season but you are feeling the itch to get into some shenanigans to ring in the new year? This week there are some great entertaining recipes to help you welcome in
 2014.

 New Years Eve Party
Oyster Crackin's (Ranch Crackers)
   
Make enough of this easy to grab snack! People will be eating by the handfuls.
Ingredients
3/4 cup canola oil1 (1 ounce) package original hidden valley ranch dressing mix (unprepared)
1 (10-11oz) box oyster crackers
1/3 cup grated parmesan cheese
Optional ingredients:
1 tsp dill weed, 1/2 tsp onion powder, 1/2 tsp garlic powder and 1/2 tsp lemon pepper
Directions
1. Mix oil, dressing mix and cheese in a large bowl (add optional ingredients now also), add crackers and mix well.
2. Let stand a couple hours, stirring occasionally.
3. Store in covered container or ziplock: will keep for several weeks

Green Goddess Dipping Sauce
 
Ditch the ranch and do something special for your dippables.  
Ingredients
3/4 cup sour cream
2 tsp. lemon zest
1/2 cup firmly packed parsley leaves1 Tbs. lemon juice
1/2 cup mayonnaise 1 garlic clove
1 green onion chopped
 1/2 tsp salt
1 Tbs firmly packed fresh dill 1/4 tsp pepper
1 Tbs firmly packed tarragon leaves
Garnish - fresh dill sprig 
Directions
1. Process first 11 ingredients in a food processor or blender 30 seconds or until smooth, stopping to scrape sides as needed. Cover and chill 1 hour before serving. Garnish, if desired. Store in refrigerator up to 1 week.

Sweet and Salty Cheese Log
 
Give it a kick with hot honey if you dare.
Ingredients 
1 (10.5oz) goat cheese log1 pint fresh berries
1/2 cup roasted salted sunflower seedsassorted crackers
1/3 cup honeyGarnish: fresh mint
Directions
1. Press or roll goat cheese log in sunflower seeds, thoroughly covering cheese, including ends. Arrange cheese on a serving platter with any remaining sunflower seeds. Drizzle with honey. Sprinkle with berries. Garnish, if desired. Serve immediately with assorted crackers.
 
Hot Pepperoni Dip
 
Use some bruschetta, corn chips or crackers to scoop up 
this warm and spicy "crack" dip.
Ingredients
1 (6oz) package pepperoni1 (14oz) jar pizza sauce
1 bunch fresh green onions, thinly sliced
1 (12oz) package shredded mozzarella 
1/2 sweet red bell pepper, finely chopped
1 (8oz) package cream cheese, cubed
1 medium tomato, finely chopped
Directions
1. Chop pepperoni into small pieces and place into slow cooker
2. add green onion, bell pepper, tomato and pizza sauce. Stir well.
3. cover and cook on low for 2 1/2 to 3 1/2 hours
4. Stir in mozzarella and cream cheese until both cheeses melt.
 
Slow Cooker Sweet & Spicy BBQ Ribs
  

 Missing summer? Us too. Here is an easy crowd pleaser that will bring back a little bit of summer for the night.

Ingredients
4-5 pounds baby back ribs1 (12oz) bottle chili sauce
salt and pepper to taste1 (8oz) bottle hoisin sauce
3 chopped green onions1/2 cup beer
1 Tbsp. minced fresh ginger2 Tbsp. Worcestershire sauce 
1 Tbsp. vegetable oil1 Tbsp. dijon mustard
1/2 cup applesauce1-3 tsp. hot sauce
Directions
1. Remove silver skin from ribs.
2. Sauté the first 3 ingredients in hot oil in small saucepan over medium heat 3 to 5 minutes or until very tender. Stir in next 7 ingredients. Bring to a boil and reduce heat medium-low. Simmer for 5 minutes.
3. Place 1/2 of the baby back ribs in a layer in a lightly greased 6 qt. slow cooker.  Next, pour 1/2 of the sauce mixture over the baby back ribs. Top with remaining ribs in a single layer. Pour remaining sauce mixture over ribs. Slow cook ribs for approximately 4 hours.

Oreo Balls

An easy sweet treat to top it all off.
Ingredients
1 (16oz) package oreos, crushed1 (24oz) package white chocolate bark
1 (8oz) package cream cheese1 (24oz) package chocolate bark
Directions
1. Using a blender or hand held mixer, mix Oreos and cream cheese together.
2. Roll into walnut sized balls
3. Chill for at least one hour
4. Stick a toothpick in an Oreo ball and dip it in the melted white almond bark.
5. Allow to harden on wax paper
6. While waiting melt 1/4 package of the chocolate bark.
7. When Oreo balls are no longer sticky to the touch, decorate with drizzles of chocolate and white almond bark.
8. I just use a sandwich bag with a tiny hole cut in one corner to drizzle the melted bark.
 
Champagne Punch
Put your bubbly in punch form for everyone to enjoy!
Ingredients
1 (12oz) can frozen cranberry juice concentrate
1 (750ml) bottle chilled white wine
1 (12oz ) can frozen pink lemonade concentrate
1 liter carbonated water
1 (6oz) frozen lime concentrate1 lemon - sliced, for garnish
2 (750ml) bottles chilled sparkling wine1/2 cup fresh mint - garnish
Directions
1. In large punch bowl, combine the cranberry juice concentrate, pink lemonade concentrate, limeade concentrate, white wine, club soda and champagne. Garnish with lemon slices and fresh mint leaves.
