Skipjack is often used in salads, sandwiches, garden salads, casseroles, tacos and as a pizza topping; it is a good source of selenium, niacin, vitamin B, magnesium and omega-3 fatty acids. Skipjack is the smallest of the major light tunas. Its flesh is dark in color, softer in texture, but stronger in flavor than yellowfin. Skipjack is the highest volume selling species of tuna.
