This Month's Featured Healthy Recipe 
Tuscan Chicken & Beans

Ingredients & Directions

1 sprig of fresh rosemary
1# chicken tenderloins
1- 19 oz. can cannellini beans
1 cup reduced sodium chicken broth
2 T. julienne-cut sun dried tomatoes
2 T. cornstarch
1/4 cup water
Salt and Pepper to taste

Snip off rosemary leaves with kitchen shears (about 2 t.)
Cut chicken into bite-sized pieces.
Coat pan with cooking spray, preheat, then add chicken, sprinkle with rosemary, salt and pepper. Cook 2 minutes, stirring occasionally.
Add beans, broth, and tomatoes.
In a small bowl, stir cornstarch and water together slowly, add to pan, stirring continuously. Heat to boiling, reduce heat and simmer 5 minutes.

Serve with dinner salad and warm rolls.

Serves 4: 247 Calories, 30 Gm protein, 6 Gm fiber.
