Dear Friends,

Here it is  - December 2013! I barely got the hang of writing 2013 on my checks! Yikes - I am bewildered and dazed at how fast this year went. It has been a wonderful and exciting year at Bonnie Mohr Studio. Launching a new website, creating a new catalog, and producing new inspirational art, are at the top of my "I feel good about 2013 list." The excitement of beginning a new year with these projects scratched off the TO DO list is empowering - and for the first time, in a very long time, I feel that I will be able to create and paint more new things than ever!

 

The plowed fields and country roads are now blanketed with a 4-inch snow cover, the Christmas lights are up, and there is a happy buzz around our house as we prepare for two of our daughters to arrive home for the holidays. It really is a magical time of the year - one that we can and should slow down for - at least for a few days to enjoy life and our loved ones!

This hearty dish has all the great taste of traditional enchiladas-- cumin, chiles, and sour cream--without all of the fuss.
It's a fast and easy favorite.

Beef & Bean Enchilada Casserole
1 lb lean ground beef
1 lg onion, chopped
1-1/2 tsp. chili powder
3/4 tsp ground cumin
2 - 15 oz cans pinto beans, rinsed/drained
2 - 4 oz cans diced green chile peppers, undrained
1-1/2 cups sour cream
3 Tbsp all-purpose flour
1/2 tsp garlic powder
12  6-inch corn tortillas
2 - 10 oz cans enchilada sauce
1 cup shredded Cheddar cheese (4 oz)

Preheat over to 350°. Lightly grease a 3-quart rectangular baking dish; set aside. In a large skillet, cook the ground beef and onion until meat is cooked through, breaking up meat as it cooks; drain off fat. Stir chili powder and cumin into meat mixture; cook and stir for 1 minute. Stir pinto beans and undrained chile peppers into meat mixture; set aside. Stir together sour cream, flour, and garlic powder; set aside. Place half of the tortillas in the prepared baked dish, cutting to fit and overlapping as necessary. Top with half of the meat mixture, half of the sour cream mixture and half of the enchilada sauce; repeat layers. Cover dish with foil. Bake for 35 minutes or until heated through. Uncover; sprinkle with cheese. Bake for 5 minutes or until cheese melts. If desired, garnish with chopped tomato, sliced green onion for garnish. Serves 12
