Leaves are Falling!

What a gorgeous autumn day it is, here in Minnesota! The leaves are falling, the harvest is going on - all about... and I am now fully engaged in my favorite season, as PUMPKIN SPICE creamer has finally come to town!! My world rocks with these simple and wonderful events!

 

My feet are still tingling and my throat a little scratchy today - as it has only been two days since our return from World Dairy Expo, Madison WI. What a great week it was! Thank you to all the wonderful friends, farmers and fans who visited us last week at the show. This year was jam packed with the same epic excitement and impressive cows as ever! Hats off to all the staff and volunteers of World Dairy Expo who work so hard to make it a great week for all the exhibitors and attendees! The class of this event is outstanding. Many thanks for my super-duper team as well - the gals who traveled to the show and those who stayed back to run the office! I am a lucky woman to have such talented and wonderful gals working for me....thank you girls!

 

I now turn my efforts back to painting - as much and as often as I can. My list is long, and I have many new paintings I hope to accomplish - VERY SOON! We are preparing to publish our new catalog by the end of the month. If you are interested in receiving one, please sign up on our website. Any of the newest paintings that don't make our printing deadline, will be published on our website as I complete them, and announce through Face book!

The Beautiful Brown Swiss Debuted at  
2013 World Dairy Expo!

Brown Swiss cattle are thought to be the oldest breed of dairy cattle. Originating from Switzerland, they now live in more than 60 countries! Their strong, majestic build and well-mannered, peaceful demeanor make them a most desirable breed.

My NEW painting is honoring this beautiful creature! Final touches are being made, and soon it will be available as a print and canvas giclee.

With cool autumn days on there way, this combination of apples and pumpkins make it a perfect treat for breakfast or dessert... Enjoy!

Apple Pumpkin Muffins

2-1/2 cups all-purpose flour

2 cups sugar

1 teaspoon baking soda

1 teaspoon ground cinnamon 

1/2 teaspoon ground ginger

1/2 teaspoon salt

1/4 teaspoon ground nutmeg

2 eggs

1 cup canned pumpkin

1/2 cup vegetable oil

2 cups finely chopped peeled tart apples

 

 

In a large bowl, combine the first seven ingredients. In a small bowl, combine eggs, pumpkin and oil; stir into dry ingredients just until moistened. Fold in apples. Fill greased or paper-lined muffin cups two-thirds full. Bake at 350° for 30-35 minutes or until muffins test done. Cool for 10 minutes before removing from pan. Makes about 18.
