Emerald Salad salad

Spring is on the horizon and we are longing for the fresh fruits and vegetables that the warm weather promises. Yet, it's still too chilly to leave behind the comfort of a warm meal. This salad is the perfect go between. Feast your eyes and fill your belly, then box up the leftovers - it saves well! Eat as a side dish, or toss in a Minnesota Grown protein (try chicken!) for a satisfying lunch. Prepare this near St. Patrick's Day and the emerald color may just bring you the "luck o' the Irish"! Enjoy this one, we will be!
