 In just a few short weeks, our Lincoln Square kitchens will be filled with clouds of flour, the pounding of rolling pins on chilled pie dough and hand cranking of Apple Masters. We are excited for next month's Apple Fest! Last year, we went through 28 cases of Granny Smith apples, hundreds of pounds of flour and sugar and countless cast iron skillets.  What's a Hot Table? It's a collection of cookware, tools and ingredients you will use in your cooking class. Our chefs and assistants take a lot of care in assembling one for each class. Typically, students get 15% off any hot table item after class.

One of our chefs' favorite ingredients is flaky and flavorful Maldon Sea Salt. We gathered these five fun salt facts from Maldon:
- Roman soldiers were sometimes paid in salt - which is where the word 'salary' comes from.
- In old Japanese theatres, salt was sprinkled on to the stage before each performance to prevent evil spirits from casting a spell on the actors.
- Salt is used to remove traces of water from aviation fuel after it is purified.
- At one time, salt bars were the standard currency of Ethiopia.
- Salt was used to preserve Egyptian mummies (see below).
