Wheat has been getting a bad rap for a while now. More people are experimenting with a gluten-free diet, some out of necessity and others out of curiosity.

There's no question the prevalence of Celiac Disease is up. Most experts agree that about one percent of the population has this condition, which makes it vulnerable to even small amounts of gluten.

Whether you believe the rise in dietary restrictions has to do with the change in modern varieties of wheat or better diagnosis and awareness, there's no arguing there are more gluten-free options available for those seeking to eliminate gluten from their diet.
