Peppers Just how hot is that pepper? Peppers are rated based on Scoville Units,  developed by Chemist Wilbur Scoville in 1912. The original method used human tasters to evaluate the pepper's heat. Humans are now spared and science is used to measure the amount of capsaicin, the compound that gives chiles heat, in parts per million. The chart below rates chile peppers, with 0 being mildest and 10 highest heat.
