Chicago's Garden to Kitchen TV show, Dig In Chicago, recently caught up with Chef Mario Scordato at the Flower and Garden Show.
The show features seasonal food straight from the garden to table and airs on Saturdays at 8:30am on WCIU (TheUToo), Channel 26.2.

A Scale of Pungent Peppers
 Just how hot is that pepper? Peppers are rated based on Scoville Units, developed by Chemist Wilbur Scoville in 1912. The original method used human tasters to evaluate the pepper's heat. Humans are now spared and science is used to measure the amount of capsaicin, the compound that gives chiles heat, in parts per million.
