Wine Academy: Level One
Monday, March 18 & 25, April 1, 8, 15 & 22 6:30pm-8:30pm Merchandise Mart
This six-week course will give you a solid understanding of wine fundamentals, including wine tasting and sensory evaluation, how wine is made, the major grape varieties and vinification styles, as well as food and wine pairing.
Week One: The Sensory Evaluation of Wine. Learn to identify wine's aromas and flavors with a strategic plan of attack!

Week Two: From Vine to Wine: How Wine is Made. We'll talk climate, soil, vineyard management, harvest, crush, and fermentation.
Week Three: The Major White Grapes: Riesling, Chardonnay, Sauvignon Blanc, Pinot Gris, Viognier and Chenin Blanc.
Week Four: The Major Red Grapes: Cabernet Sauvignon, Merlot, Pinot Noir, Syrah, Sangiovese, and Tempranillo. Week Five: Sparkling Wine, Dessert Wine, Port and Sherry.
Week Six: Food and Wine Pairing.
