Salt Block Cooking with Chef Rick Gresh
Everyone knows to cook WITH salt, but have you tried cooking ON salt? Chef Rick Gresh brings the new culinary trend of salt block cooking to The Chopping Block in a demonstration class this month.
David Burke's Primehouse's Executive Chef has been experimenting with slabs of salt for more than five years. Gresh has graduated from simple dishes of sashimi and carpaccio served on salt to bolder dishes incorporating the blocks in the cooking process. Gresh says his most important salt-cooking epiphany came while baking pizza one Sunday morning. He decided to use salt stones as a pizza stone. "The bread was perfect-on the bottom. The crust had this deliciously crisp, caramelized flavor. That's when it occurred to me that salt stones could be the ultimate vehicle for baking flatbreads and pizza," said Gresh.
