Tangy Tomato Sauce
Tomato sauce made from scratch is easy, homey and delicious on its own, but also a valuable cooking tool. Braise meat in it, poach eggs in it, top a pizza with it, or just add to pasta.
All it takes is a few ingredients. Tomatoes have a rich flavor, high liquid content, very soft flesh which breaks down easily, and the right composition to thicken into a sauce when they are cooked (without the need of thickeners like roux). We gathered our top chefs for a discussion, consulted our favorite reference guide for home cooks: The Food Lover's Companion, did some internet research and came up with an official stance for our student and the rest of the world.
