New Retail Bakery to Open Soon! 
We're opening our doors on Monday, July 13

You've probably been observing the progress at our new building at 405 E. Holly Street. We are proud of the transformation of the less-than-lovely former appearance of the building and look forward to sharing the new building with you. The new Co-op corner that welcomes people to Downtown Bellingham is looking goooood!

At our new retail bakery you can grab a coffee, tea, or espresso drink; choose one of our fresh scratch-baked goodies; or select something yummy from the deli grab-n-go case. Then sit outside on the patio to relax and enjoy the view.

You can also take in the action in the bakery from the large picture windows along Holly Street. 

We can't wait to welcome you here to the newest addition to your Community Food Co-op! Thank you for helping Whatcom County's only member-owned grocery store continue to grow to meet the needs of our 20,000+ member-owners. Open hours will be 7 am to 8 pm.

Due to the behind-the-scenes kitchen remodeling at our stores we are unable to take deli catering orders for August. But, the bakery is in full swing in their new kitchen and will happily accept your custom orders for delicious baked goods like this adorable birthday cake!

Sweet Summer Corn with Bacon and Balsamic Onions

With the harvest season humming right along, well in advance of usual harvest times, we'll soon be enjoying local sweet corn. Here's a recipe for a summer side salad that would perfectly accompany most any barbecue or other summer dinner.

It incorporates sweet, sour, salty, bitter, and meaty ingredients to create "the fifth taste" called umami. Sure to satisfy.

Preserving the Summer Harvest 

Want to save some fresh summer produce, but don't want to set up for canning? It doesn't get much easier than blanching and freezing. Bonus: it is super handy to have a stash of veggies in the freezer for a quick weekday dinner!

Organic Valley and Clif Bar Fund Organic Research (because, basically, the government doesn't) 

We love Organic Valley for many reasons, one of which is that they are a co-op! And, now we have another reason to love Organic Valley. They teamed up with Clif Bar, another great organic food company, to fund the first endowed chair to focus exclusively on organic research at the University of Wisconsin-Madison.

In a recent story on Modern Farmer's website, Gabrielle Saulsbery reported that, "per the 2014 U.S. Farm Bill, less than 1 percent of tax dollars for agricultural research goes toward organic. The other 99 percent is marked for conventional agriculture research."

So, the next time you reach for a Clif Bar or an Organic Valley product rest assured that not only are you purchasing a quality organic product, but you are also supporting important research in the field of organic agriculture.
