Featured Recipe

*These are some tried and true recipes I have acquired over the years! I hope you will try them and let me know how they turn out for you. Enjoy!

Red Wine & Rosemary Roasted Rack of Lamb  ( A repeat but a great one!)

Ingredients: 2 racks of lamb (8 to 9 ribs) with bones Frenched and fat trimmed Salt and ground black pepper 2 Tablespoons vegetable oil

Sauce: 2 medium shallots, minced 1 cup dry red wine 2-1/2 teaspoons minced rosemary leaves 1 cup low-sodium chicken broth 2 Tablespoons butter salt and ground black pepper

Preheat oven to 425 degrees and place a shallow pan in oven to heat. Season lamb with salt and pepper. Heat oil in skillet over high heat. Place lamb in skillet, meat side down with ribs facing outward. Cook until well browned and crust has formed on the surface, probably about 4 to 5 minutes. Use tongs to stand ribs up against each other to brown bottoms. Transfer lamb to preheated roasting pan and roast 12 to 15 minutes. (Retain 2 Tablespoons fat for use in sauce.) Remove and cover meat loosely with foil and let rest for 10 to 12 minutes. Carve into individual chops and serve them immediately with sauce.

Sauce: Pour off all but 2 Tablespoons of the fat from the skillet in which you browned the lamb. Saute shallots over medium heat until soft. Add red wine and rosemary. Increase heat to medium-high and simmer until dark and syrupy. Add chicken broth and reduce until about 3/4 cup. Remove from heat and add butter to blend. Season with salt and pepper to taste. Great with Bordeaux & Pinot Noir/Burgundy!

Chateau St Jean Cinq Cepages Cabernet Sauvignon 2010

Reg. $79.99 Now Bottle $63.99 20% off Mix 6 Bottles $44.99 Save 39%

Winemaker's Notes"The 2010 Cinq Cépages is a stunning color in the glass, deep ruby with a subtle violet colored rim. Layered aromas are vivid; black plum, blackberry compote, clove spice, tanned leather and a hint of fresh tobacco leaf. Secondary aromas of raspberry and spiced cherry mingle with notes of violet and pomegranate. The aromas lead to an incredibly juicy palate with flavors of blueberry, cherry and blackberry. Nuanced flavors of espresso and a distinct mocha component add to the complexity. The full-bodied wine has smooth, silky tannins that offer solid structure but do not overwhelm. The wine is plush and approachable yet complex and appealing in the glass. In signature Cinq Cépages form, this wine combines the strength of the diverse Sonoma County region to create a well-balanced, complex and powerful wine. Blend: 78% Cabernet Sauvignon, 12% Merlot, 5% Cabernet Franc, 3% Petit Verdot, 2% Malbec"

Winemaker's Notes "The notably cool growing season gave our 2010 Beaulieu Vineyard Reserve Tapestry very elegant and aromatic dark-red fruit character. Hints of sun-warmed roses weave through cherry liqueur and briary blackberry notes, which come from the wine's core of Cabernet Sauvignon. The plush, midpalate texture and dark chocolate-cherry truffle nuances reveal a generous blending of Merlot, while Cabernet Franc, Petit Verdot and Malbec add the rose, forest loam and graphite notes. Blend: 72% Cabernet Sauvignon, 19% Merlot, 3% each Cabernet Franc, Petit Verdot and Malbec."

 The Wine Clip 2 $29.99

Wine experts agree that The Wine Clip can enhance the taste of wine, making it smoother, less bitter and more refined. What once took years of aging now takes seconds. The Wine Clip uses principles of magnetics to improve the taste of wine as it is being poured out of the bottle. The effect is instantaneous, and has been found by many wine professionals to result in a genuine improvement in flavor and mouthfeel, especially when used on red wines.

Using magnets to treat fluids - water, fuel, wine, etc. - is not a new idea, and the technology has been applied successfully in many industries. What causes the effect has been the subject of some debate, but it is generally thought that passing a conductive fluid through a properly designed magnetic field has an effect on the polar molecules in the fluid.

In wine, it is believed that the large, polymerized tannins in wine that normally result in a high degree of astringency are broken up or otherwise affected, resulting in a less astringent, "softer" flavor.

The Wine Clip may also accelerate aeration, by drawing higher concentrations of oxygen to the wine as it is being poured. In contrast with most gases, oxygen is highly magnetically susceptible, and is attracted to a magnetic field. This would explain testimony from wine experts that The Wine Clip instantly produces the benefits of time consuming aeration.

(California) Caymus Vineyards Anniversary Napa valley Cabernet Sauvignon 2012 $74.99
