Featured Recipe

*These are some tried and true recipes I have acquired over the years! I hope you will try them and let me know how they turn out for you. Enjoy!

 

Grilled Spiced Beer Chicken

Ingredients:      SERVES 4 to 6

 

1 whole (3 1/2- to 4-pound) chicken

12 ounces (1 1/2 cups) dark beer, such as stout

1 1/2 tablespoon cider vinegar

1 1/2 teaspoon ground cinnamon

1 teaspoon ground ginger

1 teaspoon ground ancho chili powder or other chili powder

1/2 teaspoon ground allspice

1 1/2 teaspoon fine sea salt

2 cloves garlic, finely chopped

 

Method: 

Place chicken breast-side down on a cutting board. With poultry scissors or a very sharp boning knife, remove the backbone of the chicken by cutting down either side. Turn chicken breast-side up and press firmly on the breastbone until you hear it crack and the chicken is nearly flat. Place chicken in a large resealable plastic bag and pour in beer. Seal the bag, place it on a plate and refrigerate at least 8 hours or overnight.

Remove chicken from the bag; discard beer. In a small bowl, combine vinegar, cinnamon, ginger, chili powder, allspice, salt and garlic, and stir to make a paste. Loosen skin over breast and thighs of chicken and work a few teaspoons of paste under skin and over flesh of chicken. Rub remaining paste over both sides of the chicken.

Prepare a charcoal grill for medium-heat cooking or preheat a gas grill to medium. Once hot, make a cooler place on the grill by either pushing the hot coals to one side or turning one of the grill's heating units off or to low.

Place chicken on the hot side of the grill; cook, turning frequently and flipping chicken occasionally, until skin is well-browned and a bit crispy on both sides, about 10 minutes. Move chicken to the cool side of the grill, cover the grill, and continue to cook until juices run clear when pierced with the tip of a paring knife and an instant-read thermometer registers 165°F, 20 to 25 minutes more. Let rest 10 minutes before carving into serving pieces.

Robert Parker 94 Points The 2012 Cotes du Roussillon Villages Latour de France Occultum Lapidem offers dark, mineral-laced aromas and flavors of smoked earth, licorice, wild herbs and blackcurrants to go with a firm, structured and age-worthy profile on the palate. Comprised of mostly Syrah, from schist and gneiss soils, and aged in tank and demi-muid, this superb 2012 has solid mid-palate depth, ample tannin and a beautifully focused finish. It's a superb value that will be even better in another year or so, and have 12-15 years of ultimate longevity.

Best Buy!  50-60 year old Vines. You will not find a better small production Gevry unless you spend twice as much! This wine is as good as many Premier Crus Beautiful ripe strawberry floral perfume aroma, on the palate it has gorgeous purity of flavor with the supple strawberry and cherry showing elegance with a good underlying backbone.   Drink now to 2025.

(Oregon) Left Coast Cellars Willamette Pinot Noir Cali's Cuvee 2012 Mix 12 $20.39

Wine Enthusiast 92 Points Given extra bottle age, this is drinking optimally at the moment, with a spicy, brambly nose mixing blackberries, mint and chocolate covered cherries.There is a scent of fresh cut wood also,and a mouthful of fruit and barrel flavors that are both nicely integrated and complementary.The long finish lingers into a resonant note of black tea.

 

(Oregon) Ayoub Brittan Vineyard Willamette Valley Pinot Noir 2011 Mix 12 $42.49

Robert Parker's Wine Advocate 93 Points Former winemaker/GM at Napa's Stags' Leap Winery Robert Brittan makes Mo Ayoub's wines and also supplies a little fruit for Ayoub from his own rocky, windswept, vineyard in McMinville. While the flavors are dark and rich here, the high acidity and small-berry intensity make this more lifted and bright than the Estate Pinot. "Ayoub's 120 cases of 2011 Pinot Noir Brittan Vineyard adds to the delicious accumulation of evidence that this dramatically domed and stonily basaltic site south of McMinnville developed by his oenological coach Robert Brittan is among the most exciting in the Willamette Valley, indeed in the entire U.S. (See especially my account of the Brittan estate wines in this report and that of Issue 202.) "There's just more of everything here," notes Ayoub of the present instantiation, and the most dramatic thing I notice is an emphasis on black fruits rare for this vintage, but whose sense of ripeness is allied to vintage-typically tartly bright fruit acids that seem to be buffered by sheer density. The feel here is firm but not hard or austere. Savory elements of animal blood, smoked meat and game lend striking contrast to the intense fruit. An onrush of what I can only refer to as rocks and gravel sets the seal of intriguing complexity on this Pinot's audacious performance. No doubt it will settle down somewhat with a few years in bottle, but I suspect - even though only short-term track record for the bottle evolution of Pinot from this site has accumulated - that one will want to hold at least a portion of this concentrate through 2025."

 

(Oregon) Arterberry MareshMaresh Vineyard Willamette Valley Pinot Noir 2011 (Very Limited) Mix 12 $55.24

Robert Parker's Wine Advocate 95 Points The Arterberry Maresh 2011 Pinot Noir Maresh Vineyard pours forth an ethereally high-toned combination of red berry distillates, fresh berry scents, and nut extracts such as I associate with Pinots from this site and some of its Worden Hill Road neighbors, and found also in the extraordinary 2005 that Maresh's father Jim Arterberry crafted from these vines, which I tasted nearly alongside. (See my note in this report). Ginseng tea and bittersweetly perfumed iris waft across generously juicy cherry and red currant, while mineral salts, meat broth, mushroom stock and crustacean shell reduction all open the doors to umami and liberate the salivary glands in an incandescent and ravishingly rejuvenating finish. Also reminiscent in this 2011 of a perfectly resolved, mature wine is the silken-smooth palate texture, along with an almost airy sense of levity and elegance, yet all the while allied though to penetrating fruit and mineral intensity. Full-bodied, rich, nicely textured and impressively pure, it can be enjoyed over the next 3-4 years.
