The summer began in June with nice temperatures - and then we received 11.05' of rain throughout the month. July has started on a much different note, VERY HOT AND DRY.. This week we will be planting aquatic plants on the lake banks on Egret course. We will also be finishing up some landscape plantings around the clubhouse, behind Ibis 9 green and the rock walls along Osprey 2 tees.
This week starts our second aerification programs on Ibis. All of these practices are for the improvement of the soil profile and to create air into the root zones. Please remember to fill your divots, repair ball marks and to keep all four wheels on the paths. Thank you for your consideration.

The Chef Recommends........

Recently, I had a discussion with one of the cooks about apples. The discussion was based around the seasonality of apples and where the apples come from in the spring. As we know, apples ripen close to fall. So we are either sourcing apples from another country or somehow preserving them.
The answer is we are preserving them. This process is done by picking the apples slightly under-ripe. The apples are then washed very well and sprayed with a compound called 1-methylcyclopropene. Sound delicious right! The apples are then stored at a very cold temperature in a dark room with reduced oxygen.
This process is a common technique that has been occurring for a long time. Prior to the introduction of 1-methylcyclopropene, a fungicide was used to prevent mold from growing on the apples during their storage.
Naturally, this process has a few downsides. The main one that I have read about is that the natural antioxidants of the apples diminish over time. The bottom line is that if you are searching for a fresh natural apple, you will need to visit a farmer's market during apple season.

Dear members,
We will host July's Cocktail Party this Wednesday. Feel free to invite your family and friends for what is sure to be a fun night with entertainment from Ron Rutz. Chef will be working the pasta station and we will have Shrimp Cocktail, Herb Crusted Mahi and much more.
July is lobster month in The Grill Room. Every Friday night we will offer 1-� lb Maine Lobster as our special, served with corn on the cob and red bliss potatoes. Supply will be limited, so we suggest ordering your lobster by Wednesday to ensure one is reserved for you. Almost half of the 90 people that joined us for dinner last Friday took advantage of this great summer promotion so don't miss out!
We also launched our new menu this week in The Grill Room. You will notice many new items on our summer menus; we track the sale of these items, and along with your feedback, use this information to help us plan our menus for the busy seasonal months. We appreciate all your input on the variety of food served in your Grill Room. Some new items this month include Oysters Rockefeller, Shrimp and Crab Melt, Pan Seared Pompano, Soft Shell Crab and much more. We look forward to your feedback.
Grill Room service will remain the same in July as in June -- lunch every day except Tuesday and dinner service on Thursday and Friday evenings.

Dress Code for The Dining Room:
- Shorts are not allowed for evening dining in The Dining Room.
- For All Evening Dining - Gentlemen must wear slacks and shirts appropriate for upscale casual dining.
- Ladies are requested to dress in a fashion compatible with the dress required of gentlemen. We request the ladies refrain from wearing revealing clothing more suitable for beach or nightclub settings.
- Jacket and tie will be required for the following special events: New Year's Eve, Valentine's Day Dinner Dance and Spring Gala Dinner Dance.
Dress Code for the Grill Room:
- Shirts and footwear must be worn at all times.
- Men are required to remove their hats when indoors (Dining Room & Grill Room)
- Cell Phone calls are not permitted in the Dining Room or Grill Room
- Appropriate tennis clothing and golf attire is expected.
- Men - Collared shirts with sleeves, 1" mock turtleneck shirts, Bermuda style shorts and appropriate dress denim.
- Ladies - Blouse or shirts either sleeves, sleeveless and with or without a collar, Bermuda length shorts, skirts, slacks, dresses or appropriate dress denim.
- No short shorts, cargo shorts or cargo pants, tee shirts, sweat shirts, tank tops, tube tops, fishnet tops, denim or blue jeans with frayed cuffs, tattered jeans, bleached, stained, dirty, ripped or below waist (hip-hugger type) are not acceptable.

Wine Club News

Dear Members,
This week I am pleased to offer two very special wines!
Cantina Liseddi, Vermentino Superiore di Gallura Lagrimedda DOCG (Sardinia) With only 500 cases produced, Florida is the only state in the US that has access to this wine and only through our distributor! This white wine is medium-bodied with a lightness to it which is refreshing, showing lovely citrus and minerality on the palate. A dry white crying out for deep fried squid, natural oysters, and fish and chips, but pairs well with a range of fresh fish and shellfish. Normally $20 per bottle, for a short time available for only $13/bottle! Auteur Pinot Noir (Sonoma Coast) With only 362 cases made, this is an extremely limited wine with 92 Points from Wine Spectator and 91 Points from Robert Parker. The Winemaker Kenneth Juhasz creates his wines in a more Burgundian Old World Style with a new twist. The balance depth and complexity of the old world combined with the richness and intensity of the new. This Pinot Noir has alluring and vibrant aromas of black cherry and cardamom with savory garrigue undertones. Pairs with a variety of dishes from poached salmon to a rich braised duck. Normally $49/ bottle now available for only $39.60/bottle.
