The planting of Zoysiagrass in front of the clubhouse is complete and ready for its first mowing. We have started at a higher height of cut so as not too stress the the new grass. It will take a few mowings and rolling to get it smooth and at our desired height. At some time, there may be some scalping in the process of lowering the height of cut. This is expected and the grass will adapt to the new height as do all southern grasses
We are in the final stages of tree planting on the Egret course. Gordon Lewis has been on sight weekly guiding the process. See some photos below. For more photos of changes on the Egret course, click here.

About Those Scallops.........
To add to the topic of scallops from last week, I will explain a little about the scallop fishing industry and how they produce their product. Five years ago I had the opportunity to attend the Boston Seafood Show. On one of the mornings, our seafood provider brought us to a scallop processing plant so we could see the whole operation. The boats go out for three days of scallop fishing. During these three days all of the scallops are shucked on the boat and placed into a large holding tank. When the boat arrives at the plant, the top layer which is the freshest layer, is used for the "dry pack" scallops, the middle layer is then further treated with saline and used as wet scallops. The bottom and oldest layer is cleaned and individually quick frozen. These are the scallops you will find in your grocery store freezers.

Dear members,
We have added live entertainment by The Classics II this Wednesday, June 15 for our Cocktail Party in The Dining room. Chef will be working the Shrimp Scampi Station and our Pastry Chef, Sean, will be working the Dessert Station featuring his delicious Lemon Pound Cake and selection of summer ice-cream flavors.
The new Grill Room menu for June has many new items, such as Summer Shrimp Quesadilla, Seared Jumbo Sea Scallops, Heirloom Spinach Salad with Fresh Strawberries, Smoked Salmon BLT, Chicken Milanese, Mushroom Ravioli and we will also bring back Liver and Onions for the many members who requested it. Our goal during the summer months is to give you several new menu items to try and we appreciate your feedback on your favorite selections.
Grill Room service is unchanged for June and will include lunch every day except Tuesday and dinner service on Thursday and Friday evenings. Join us for Prime Rib night in The Grill Room every Friday evening. You will receive a complimentary bottle of wine with the purchase of 2 entrees or you may take advantage of our summer promotional pricing of 50% off almost all bottles on our fine wine list.

Dress Code for The Dining Room:
- Shorts are not allowed for evening dining in The Dining Room.
- For All Evening Dining - Gentlemen must wear slacks and shirts appropriate for upscale casual dining.
- Ladies are requested to dress in a fashion compatible with the dress required of gentlemen. We request the ladies refrain from wearing revealing clothing more suitable for beach or nightclub settings.
- Jacket and tie will be required for the following special events: New Year's Eve, Valentine's Day Dinner Dance and Spring Gala Dinner Dance.
Dress Code for the Grill Room:
- Shirts and footwear must be worn at all times.
- Men are required to remove their hats when indoors (Dining Room & Grill Room)
- Cell Phone calls are not permitted in the Dining Room or Grill Room
- Appropriate tennis clothing and golf attire is expected.
- Men - Collared shirts with sleeves, 1" mock turtleneck shirts, Bermuda style shorts and appropriate dress denim.
- Ladies - Blouse or shirts either sleeves, sleeveless and with or without a collar, Bermuda length shorts, skirts, slacks, dresses or appropriate dress denim.
- No short shorts, cargo shorts or cargo pants, tee shirts, sweat shirts, tank tops, tube tops, fishnet tops, denim or blue jeans with frayed cuffs, tattered jeans, bleached, stained, dirty, ripped or below waist (hip-hugger type) are not acceptable.
