Re-Tiling of Clubhouse Hallways
The project to re-tile the west rotunda, including the hallway towards the Golf Shop, the rest rooms and a small tiled area at the former caf� entrance will begin on Tuesday, May 31. Work could extend to two weeks. During that time, the entrances will have to be closed off and traffic will have to be redirected. Signs will be posted to assist you and the back doors to each locker room/shower areas will be unlocked for your use during this time.

This work will not affect the Golf Shop's hours of operation, but their back entrance will be closed during the project.  Handicap computers have been relocated to the men's and ladies locker rooms.

We plan to split the project in two (2) phases. The Rotunda itself being one phase and the Golf Shop hallway, rest rooms and former caf� entrance the other phase. We don't anticipate any problems, but in construction you never know. Nonetheless, please know, we will do everything in our power to make this as painless as possible. We apologize for this temporary inconvenience and ask for your patience, cooperation and understanding during this project.

Summer Project Update

Landscape and clubhouse painting projects are wrapping up. By the end of the week we should be complete. The removal and addition of new tile flooring in the rotunda will start on Tuesday and take a few weeks- see above.  We thank you for your patience and understanding. We hope you enjoy the refreshed look of the clubhouse and grounds (see below).

What really happens when we close nine holes down for renovations?  There are many steps taken to prepare the bermudagrrass.  Aerification of all areas is the first step.  It's the next steps that are necessary and take the most time to complete.  Cleanup is what takes the most time and it needs to be dry. Any rain or moisture delays this process and makes it more difficult.  Following are a series of pictures in the order that these processes occur, say for fairway aerification.

The Chef Recommends........


Now that the slow season for culinary is here, we have had time to focus on a few professional goals.  One of the goals we are currently working on together is my Certified Executive Chef practical.  The practical is the final step in a process that requires:

       Culinary nutritional courses
        Food Safety & Sanitation courses
        Management courses
        Years of management in the field
        Written exam
        Practical

The practical consists of a 3-hour cooking window and 15-minute plating window.  The exam requires the candidate to prepare 3 courses with 4 portions of each course. The format of the exam requires all candidates to use 2 chickens, 2 lobsters, 10 ounces of salmon and a set grocery basket of items that contain items like artichokes that require a higher level of skill to produce.  The scoring for the exam is based on execution of knife skills (butchery, classical knife cuts), sanitation, organization, use of product, cleanliness, flavor, and time.

I have the team assisting me with this certification so that next off-season they will be able to perform the same practical with the same menu and processes that we have been practicing all summer.

Dear members,
 
We will launch our new Grill Room menu for June this week with many new items, such as Summer Shrimp Quesadilla, Seared Jumbo Sea Scallops, Heirloom Spinach Salad with Fresh Strawberries, Smoked Salmon BLT, Chicken Milanese, Mushroom Ravioli and we will also bring back Liver and Onions for the many members who requested it. Our goal during the summer months is to give you several new menu items to try and we appreciate your feedback on your favorite selections.

Join us on Wednesday, June 15 for another great Cocktail Party in The Dining room. Chef will be working the Shrimp Scampi Station and our Pastry Chef, Sean, will be working the Dessert Station featuring his delicious Lemon Pound Cake and selection of summer ice-cream flavors. 
 
For our wine lovers, we have added a Wine Dinner on June 8.  All members and guests are welcome to join us for this special evening featuring wines from Trinchero.
 
Grill Room service will remain unchanged for June and will include lunch every day except Tuesday and dinner service on Thursday and Friday evenings. Join us for  Prime Rib night in The Grill Room every Friday evening. You will receive a complimentary bottle of wine with the purchase of 2 entrees or you may take advantage of our summer promotional pricing of 50% off almost all bottles on our fine wine list.

Dress Code for The Dining Room:
  • Shorts are not allowed for evening dining in The Dining Room.
  • For All Evening Dining - Gentlemen must wear slacks and shirts appropriate for upscale casual dining.
  • Ladies are requested to dress in a fashion compatible with the dress required of gentlemen. We request the ladies refrain from wearing revealing clothing more suitable for beach or nightclub settings.
  • Jacket and tie will be required for the following special events: New Year's Eve, Valentine's Day Dinner Dance and Spring Gala Dinner Dance.
 
Dress Code for the Grill Room:
  • Shirts and footwear must be worn at all times.
  • Men are required to remove their hats when indoors (Dining Room & Grill Room)
  • Cell Phone calls are not permitted in the Dining Room or Grill Room
  • Appropriate tennis clothing and golf attire is expected.
    • Men - Collared shirts with sleeves, 1" mock turtleneck shirts, Bermuda style shorts and appropriate dress denim.
    • Ladies - Blouse or shirts either sleeves, sleeveless and with or without a collar, Bermuda length shorts, skirts, slacks, dresses or appropriate dress denim.
    • No short shorts, cargo shorts or cargo pants, tee shirts, sweat shirts, tank tops, tube tops, fishnet tops, denim or blue jeans with frayed cuffs, tattered jeans, bleached, stained, dirty, ripped or below waist (hip-hugger type) are not acceptable.
