Hello Friends,

  

Finally a crisp is in the air and I can officially call it the holiday season.  It has been a long fabulous autumn, but I need a little winter to get in the mood.  I don't know about you but I was all ready to fire up candles in the fireplace for the holiday festivities.  Scrap the candles- time to start chopping wood.  (I say that as if I actually have to chop wood, HA!) 

 

Our office is looking pretty festive  these days.  Every day as you enter the office there is a new touch of holiday spirit carefully placed for our enjoyment.  Check  out Rhonda's office.  Rhonda has  strategically assured that the only children to get a stuffed lion under the tree has to have a relative that works at Lyons.  Mind you-her dining room at home looks similar. 

  

We are getting ready for all our holiday festivities.  We have our company holiday party at Encanto Park this coming weekend.  This year- the weather calls for snow and rides and a visit from Santa and his elves.  (Thank you John Vestal and Francisco Lemus, appearing for the 3rd year in a row in this honorable role)  Every year the Lanue's host this event for employees and their families.  This year we have 175 Lyons cubs coming together for this celebration.  We  are family. 

 

I love this time of the year.  I don't get it all done, I haven't sent cards in years.  What do I love?  Spending time with family and friends.  The weather is perfect.  The kids are out of school.  Ride a bike, take a hike, go to a farmers market, visit an old friend, see a great movie- enjoy- all the moments.

What is the best gift you ever received?
That is the question I asked our Lyons employees this week.  We heard lots of tales about bicycles, ice skates, new pajamas and the warm and fuzzy realizations that the best gift is always family.  Katherine told me a story that has to be shared:
 

My Nana handmade a bridal dress for a Barbie Doll and gave it to me for Christmas in 1980.  It was a bit confusing since I was only 18 years old and considered myself too young to get married and too old to play with dolls.  The real present was the note she wrote:

 Fast forward 32 years later...my daughters got a hold of the Barbie Doll and she is long gone...I have carried the letter with me every day for the past 32 years.

 Pot Luck Recipe

 What's cooking this month?  The season is not complete without celebrating Hannukah and enjoying

Rhonda's Latkes

   

 

  Ingredients

  • 5 lbs. peeled potatoes
  • 2 med onions
  • 6 eggs
  • ¼ - ½ cup Matzo meal
  • White pepper and Salt to taste
  • Vegetable oil for frying 

 

Directions

  1. Grate potatoes and onions together . (You can play with this and go from a chunky grate to a liquid consistency depending on preference.
  2. Beat eggs and mix into potato/onion mixture. Consistency should be a little gooey like oatmeal.
  3. Add matzo meal (you could use unflavored breadcrumbs or flour as a substitute).  Just enough to make the batter bind.
  4. Add salt and pepper to taste. ( a heapiing tablespoon is a good start)

Heat a generous amount vegetable oil in a frying pan, about ½ inch.  Use a small gravy ladle, or large serving spoon to put batter into oil.  I recommend making 1 or 2 to determine if more salt/pepper, and possibly some of the other ingredients should be added.  Fry until golden brown on both sides. 

 

Draining the oil from the latkes is very important.  I use a cookie sheet with a layer of paper bag, and then paper towel to put the latkes on to remove as much oil as possible. 

 

This is a treat that will not last, and it may seem like you are cooking for an army but you will be surprised that, depending on who is in your kitchen, you may only have half of what you actually cooked left to serve!

 

Serve with sour cream or applesauce.
