Hip Sisters Tahitian Beach Party 2008!

THANK YOU to all the Hip Sisters

who joined us last weekend to celebrate the first weekend of summer! We had a blast!

Several of you ladies wanted the recipe for our Tahitian Chicken, so here you go gals!

Tahitian Chicken

2 Rotissrie Chickens, deboned and shredded

Sauce:

1 1/4 cup pineapple juice

1 cup sugar

2 T. cornstarch

1/2 cup apple cider vinegar

1 T. soy sauce

1/4 tsp ginger

1 chicken bouillon cube

Mix together all ingredients (except chickens) and bring to a boil, stirring constantly. Boil for 2 minutes. Pour over chicken. Keep warm in a crock pot.

Recipe Note: Serve over a bed of rice. Add your favorite toppings: cashews, peanuts, mandarin oranges, green onions, coconut, chinese noodles, pineapple tidbits, sunflower seeds. Sounds like a strange combo, but it's delicious!

Great to serve to a crowd!
