Greetings!

Here on the Cayuga Lake Wine Trail in the heart of the Finger Lakes we on the trail wish you a very Happy and Prosperous New Year.  What's new for 2014? We have a new member on the trail, Toro Run Winery, located on the west side of Cayuga Lake off of Rt.89, Bellwether Wine Cellars is continuing to produce fine wines as well as their hard cider products, we're mobile friendly and we will be able to market more to the Pennsylvania through print, radio and TV. Very exciting year!

See you along the trail!!

Cayuga Cathy

Toro Run Winery

Toro Run Winery, the newest winery member on the Cayuga Lake Wine Trail has one of the most amazing views located on the west side of Cayuga Lake of of Rt. 89 between Buttonwood Grove Winery and Cayuga Ridge Estate Winery.. "You can see for miles" says, co-owner Chris Weaver, "We didn't realize the view was there until we knocked down some of the trees," calling it "one of the most beautiful views in the Finger Lakes." For a virtual experience of this scenic view take a look at their website tororunwinery.com.

The winery is co-owned by James Coppola and Chris Weaver both Auburn natives who bought 64 acres in Ovid seven years ago. They planted 11 acres of vines for both red and white wines, 15,000 vines in 2009. They were able to accomplish this with assistance from a local nursery and Cornell University where Jim holds a degree in Agricultural Economics, while Chris attended University of California-Davis where he studied Viticulture and Enology. In 2012 they built a production facility and have made their dream become a reality.

They produce 10,000 cases of wine a year and offer a wide selection of vinifera wines including Riesling, Chardonnay, Gruner Veltliner, Gewurztraminer and Cabernet Franc with a sparkling wine and Pinot Noir in production. Additionally they offer catering services, site rentals for weddings, reunions and other special events.

The winery has a Spanish theme and plans to serve a tapas menu that includes stuffed mushrooms, conch chowder, and a combo platter of cheese, jamon, mushrooms and chorizo sausage. The stuffed mushroom recipe comes straight from a restaurant in Madrid and as Weaver puts it, "I visited the restaurant 30 times to get the recipe". What inspired this Spanish theme? The video tells all, of the running bulls in Pamplona, Spain. Weaver personally has run with the bulls and couldn't believe he was going to have to miss this yearly event. Spoken like a true wine owner, now he runs with the grape harvester.

The winery also carries a dessert wine made from estate-grown Gewurztraminer grapes. Weaver states "Producing the wine involved several steps, including breaking up the harvested grape clusters, dehydrating them with fans while they were laying on straw and then rehydrating them with Gewurztraminer wine after the fruit rested. Out of probably 400 vines, we produced 35 gallons of concentrated Gewurztraminer which will be packaged in 375 milliliter bottles".

The winery is now closed for the season but will be open for our trail events the first one being our "Say Cheeeese" event, February 8 & 9. Make sure to stop in to try their wines and their first trail recipe of many, Buffalo Mozzarella with Glazed Pine Nuts and Mint.
