Vegetable Pasta Salad

Ingredients

 For Dressing

  • � cup of DaVinci Pure Olive Oil 
  • 1 tablespoon white vinegar
  • 2 cloves garlic, crushed
  • � teaspoon salt
  • � teaspoon pepper
  • � teaspoon dried basil
  • � teaspoon dried oregano

For Pasta

  • 1 box of DaVinci Whole Wheat Penne cooked according to package directions 
  • 2 tomatoes, diced
  • 1 green bell pepper, diced
  • 1 onion chopped, diced 
  • 3 ounce black olives, sliced
  • � cup of freshly grated parmesan cheese

Directions 

  1. Combine olive oil, white vinegar, garlic, salt, pepper, dried basil, and dried oregano. Stir and set aside.
  2. After pasta has cooled, in a large bowl add in tomatoes, green bell pepper, onion, and black olives.  Mix gently to combine.
  3. Pour the dressing over the pasta and mix until dressing has coated the pasta and vegetables.
  4. Refrigerate for an hour.
  5. Before serving, top pasta salad with freshly grated parmesan cheese and enjoy.
