Dear Members & Friends of VCC;

 

It is with mixed emotions that I am stepping down as President and CEO of the Vaughan Chamber of Commerce. I have thoroughly enjoyed my tenure with the Chamber; in particular, working alongside the Vaughan business community, municipal, regional, provincial and federal government representatives and several non-profits and charities.

 

The strength of the VCC membership is made possible thanks to you. You are the Voice, Community and Culture of Vaughan and through working together; business can be strengthened, and ultimately our city is strengthened.

 

Although I am returning to my roots of philanthropy; to lead a capital campaign at Yonge Street Mission, I will always be grateful for the opportunity to serve with the Vaughan Chamber members, staff and Board of Directors.

Peter Hall joined Export Development Canada (EDC) in November 2004. He has over 20 years of experience in domestic and international economic analysis and forecasting. Mr. Hall is responsible for overseeing economic and political risk analysis, special research and the corporate library. In addition to advising senior management at EDC, Mr. Hall is a featured speaker at conferences across the country and internationally, and regularly appears in television, radio and print media commenting on recent economic developments and implications for the outlook. He produces a widely circulated print and video weekly commentary covering an eclectic range of international economic issues.

Board of Directors Call For Nominations

Vaughan Chamber members have the opportunity to consider either nominating themselves or someone they know to serve on the Board of Directors. Ideally the candidate will have previously served on a Chamber Committee / Board and has expertise in one or more of the following areas: Board Governance, Finance, Events, Policy/Advocacy, Marcom and Membership. The terms are 2 years beginning April, 2015.

 

Please submit before February 24 by email a CV together with a letter of interest outlining the reasons for wanting to serve on the Board to info@vaughanchamber.ca

  • The MarCom Committee provides ongoing promotional support to the Vaughan Chamber of Commerce by developing materials, resources and technology that will enhance the marketing and communications initiatives of the Chamber.

The Healthy Italian - Veggies In The Spotlight

Make veggies the heart of your meal with this easy, filling soup.

 

Creamy Chickpea-Squash Soup (Crema di ceci e zucca)

 


1½ cups dried chickpeas (about 10.5 oz/300 g) or 2 cans (19 oz/540 mL each) no-salt-added chickpeas

2 tsp extra-virgin olive oil

3 slices turkey bacon-style, chopped (2.8 oz/80 g)

1 onion, chopped

4 cloves garlic, minced

1½ cups chopped celery with leaves (see tip)

2 cups peeled, cubed butternut squash

7 cups no-salt-added vegetable or chicken broth

2 sprigs fresh rosemary

½ tsp sea salt

Freshly ground black pepper to taste

¼ cup 2% evaporated milk

Extra-virgin olive oil and crushed red pepper flakes for garnish (optional)


 
1) Soak chickpeas overnight in enough water to cover them by several inches in a glass or ceramic bowl. Drain chickpeas, rinse and drain again when ready to use. (If using canned chickpeas, drain and rinse chickpeas just before preparing ingredients).

 

2) In a large pot, heat olive oil over medium-high heat and add bacon. Stir continuously until bacon is lightly browned, about 1 to 2 minutes. Add onion, garlic and celery and cook until softened. Add chickpeas, squash, broth, rosemary, salt and pepper; cover and bring to a boil. Reduce heat to medium and simmer until chickpeas are tender, about 45 minutes. (If using canned chickpeas, reduce cooking time to 20 minutes and follow the remaining instructions.) Remove and discard rosemary stems.

 

3) Remove soup from heat and immerse a stick hand blender in pot to purée soup until smooth (or carefully transfer soup in batches to the bowl of a food processor and return soup to pot). Return pot to burner and stir in evaporated milk until fully incorporated. Ladle into bowls and serve hot with a drizzle of olive oil (rosemary-infused is even better!) and crushed red pepper flakes, if desired.

 

TIP: Don't discard the celery tops. Not only do the leaves impart great flavor to this soup but also much more vitamins and minerals, including vitamin C and calcium, than its stalks.
