Board of Directors Call For Nominations
Vaughan Chamber members have the opportunity to consider either nominating themselves or someone they know to serve on the Board of Directors. Ideally the candidate will have previously served on a Chamber Committee / Board and has expertise in one or more of the following areas: Board Governance, Finance, Events, Policy/Advocacy, Marcom and Membership. The terms are 2 years beginning April, 2015.
Please submit by email the nominee's CV together with a letter of interest outlining reasons for wanting to serve on the Board to Paula Curtis, President & CEO at [email protected] by February 24th.

- The Membership Committee works to attract and retain members through facilitating focus groups, Membership Matters Sessions and starting the Ambassadors Program, to name a few opportunities.
- The MarCom Committee provides ongoing promotional support to the Vaughan Chamber of Commerce by developing materials, resources and technology that will enhance the marketing and communications initiatives of the Chamber.

The Healthy Italian: Great Grains
Creamy risotto hits the spot after a frigid day on the road. We're swapping out the old - white arborio rice - and bringing in an ancient grain - barley - for a delicious, nutritious meal that's packed with fibre and flavour.
WILD MUSHROOM BARLEY RISOTTO
|
- 0.5 oz (14 g) dried porcini mushrooms
- 3 cups reduced-sodium vegetable or chicken broth
- 1 tsp each: extra-virgin olive oil and light butter
- 2 cloves garlic, minced
- � cup chopped onions
- 1 cup pearl barley
- 2 cups peeled, cubed eggplant
- 1 pkg (8 oz/227 g) cremini or white button or oyster mushrooms, thinly sliced, divided
- � cup white wine
- � tsp sea salt
- 4 tbsp freshly grated Asiago cheese
- 3 tbsp chopped fresh basil
- Freshly ground black pepper to taste
Makes 4 servings | 40 min or less | Meatless
|
- Reconstitute porcini mushrooms by soaking in 1� cups boiled water for 10 minutes. Remove mushrooms from water (reserve water) and gently rinse them under warm water, using your thumbs, until all the grit has been removed. Drain and chop; set mushrooms aside. Strain mushroom water through a fine mesh sieve to remove grit. Combine mushroom water (discard grit at the bottom of bowl) with broth.
- In a large pot, heat olive oil and butter over medium-high heat. Add garlic and onions and cook until onions are softened, about 1 minute. Add barley and stir until well coated. Stir in eggplant, half the cremini mushrooms, wine and salt; cook for 1 to 2 more minutes, until wine is almost absorbed. Reduce heat to medium-low.
- Add a ladle of broth at a time to large pot until liquid is absorbed. Cook for about 20 to 25 minutes or until barley is al dente, stirring occasionally. Add remaining mushrooms about halfway through cooking time. Just before serving, stir in grated cheese, basil and pepper. Serve hot.
