- The Membership Committee works to attract and retain members through facilitating focus groups, Membership Matters Sessions and starting the Ambassadors Program, to name a few opportunities.
- The MarCom Committee provides ongoing promotional support to the Vaughan Chamber of Commerce by developing materials, resources and technology that will enhance the marketing and communications initiatives of the Chamber.

The Healthy Italian: Brown and Red Lentils Soup
If you're looking for a filling one-pot meal to whip up after a long day at the office, this fibre- and protein-rich soup is sure to become a regular at the table.
|
1 tbsp extra-virgin olive oil
1 large onion, chopped
2 cloves garlic, minced
1½ cups chopped celery with leaves
¾ cup diced carrots
1¼ cups canned no-salt-added diced tomatoes, drained
7 cups reduced-sodium vegetable broth
2 cups coarsely chopped baby spinach leaves
²/3 cup dried brown lentils, rinsed
²/3 cup dried red lentils, rinsed
2 to 3 bay leaves (see tip)
2 tbsp minced fresh parsley
Pinch crushed red pepper flakes
Freshly grated Parmigiano-Reggiano cheese (optional)

In a large pot, heat oil over medium-high heat. Add onion and garlic and cook until onions are softened, about 2 minutes. Add celery and carrots and stir continuously until they start to soften, about 2 to 3 minutes. Add diced tomatoes, simmer for 4 to 5 minutes and stir in remaining ingredients, except the cheese.
Reduce heat to medium, cover and simmer for 25 to 30 minutes, stirring occasionally. Remove and discard bay leaves. Ladle soup into bowls and serve hot with freshly grated cheese, if desired.

TIP: Don't skip the bay leaves. They impart a wonderfully unique taste that helps give this soup its full character. Look for them where either fresh herbs or dried spices are sold at your local grocery store.
