Stories from the Heart: Why Not Me?

Some friends of ours just got some difficult news. Jacob, wife of Jordan and father of four children under age eight, was diagnosed with gliobastoma (also known as grade IV astrocytoma). He had immediate surgery to remove the growth from his brain and will undergo a series of treatments as part of a clinical trial at Barrow's. Nevertheless, the prognosis is not good.


I've always thought Jake and Jordan were amazing people, but I believe the way people handle suffering often says a great deal more about them. So, I wanted to share a portion of their recent blog post. It reveals that they are even more amazing than I thought: 

 

This whole process has been gut wrenching to say the least. The odds of getting this disease are astronomical. Early on, we decided that rather than question "why me?" we would adopt the motto "why not me?" We both feel that we have led such fortunate lives. Everyone has bad things happen in their lives, so why should we be exempt? People much better than us have suffered from the same or much worse maladies. So, "why not me?"

 

Today I'm wondering, why not me? And, I'm thankful it's not me. And, I'm so, so sorry it's Jake. I hope against hope that if I ever face this kind of battle, I am able to face it with even a small measure of the wisdom, grace and courage Jake and Jordan are showing the world.

Healthy Recipe: Grilled Miso Salmon

 

A dab of creamy miso paste adds flavor to this easy dish. Mirin is a sweet rice cooking wine, available in some supermarkets and in most Asian markets. Try the marinade with grilled chicken or pork.
  • 1/2 cup mirin
  • 2 tablespoons minced fresh chives
  • 1 tablespoon yellow miso 
  • 1 tablespoon low-sodium soy sauce
  • 1 teaspoon tahini
  • 1 teaspoon peeled and minced fresh ginger
  • 4 salmon fillets, 5 ounces each, skinned 
  • 2 tablespoons chopped fresh cilantro (fresh coriander)
  • 1 teaspoon sesame seeds, toasted

In a shallow baking dish, whisk together the mirin, chives, miso, soy sauce, tahini and ginger. Add the fish to the marinade and turn to coat. Cover and marinate in the refrigerator for 1 to 2 hours, turning the fish occasionally.

 

Prepare a fire in a charcoal grill or place a grill pan over high heat. Remove the fish from the marinade and pat dry. Discard the marinade. When the grill or pan is very hot, place the fillets on it and cook, turning carefully with a spatula, until grill-marked, firm to the touch and opaque in the center, about 4 minutes on each side.

 

Transfer the fillets to a serving platter. Garnish with the cilantro and sesame seeds and serve immediately.

 

Serves four
