Would You Like Some Cheese With That Beer?
Summertime is full of my favorite things: cook-outs, laying out beach-side, late nights and great beer. I look for any excuse to throw an impromptu get together with friends and have been looking for something other than your traditional steak and potatoes. So what better than a beer and cheese pairing party? All you need are a few good items, a little time and some awesome folks with a great palette.
What you need: some shot glasses (for beer sampling), a variety of your favorite craft beer and an assortment of cheeses. You can even provide some notebooks for notes on flavors. Also make sure you have some good ole' H20 on hand. Set a rustic scene on your back patio or kitchen table and let the pairing begin!
Here are some simple pairing ideas:
- A pale ale with sharp cheddar
- An IPA with Gorgonzola
- Ambers with a tangy port cheese
- Brown Ale with some aged Gouda
- Wheat Ale with a creamy mozzarella
- Porter with Gruyere or an aged cheddar

Ace Apple Cider
Ace Apple Cider has an apple nose and a clean dry finish. It tastes like a Sauvignon Blanc. It is made out of 100 per cent apple juice and is all natural, gluten-free and low-calorie like the rest of our cider range. The alcohol is a 5% by volume. . This cider goes well with all pork dishes and seafood as an alternative to the high alcohol of wine and heaviness of beer.

Ace Perry Cider
First released in 1996, this is the first Perry cider made in California. It became very popular very quickly, as it is so refreshing. It is made from apple and pear juices. We use champagne yeast in all our ciders and ferment for 10-14 days. We then cold-filter 4 times and carbonate them before putting into bottles or kegs. The ingredients are all natural juices. It is 5% alcohol by volume with a lovely pear nose and a smooth semi-sweet mouth feel with a dry finish.

Ace Berry Cider
Fermented in apple juices for 14 days to dryness and then add back fresh blackberry and raspberry juices to produce a light purple cider. Stone Distortion IPA
An imperial India pale ale ably backed by Nugget, Comet and Calypso hops, and amplified care of a healthy dry-hopping with Vic's Secret, a new Australian hop, adding citrus and tropical fruit oomph. To give this modern masterpiece some soulful, classic character, we traced the roots of brewing to the days when Old World herbs were used to spice beers, adding in coriander and, a first for us, elderberries. To stand up to that sumptuous spice and blaring bitterness, we added golden naked oats, which are lightly roasted and add body and enhanced mouthfeel to the brew like a steady, unbreakable backbeat to an incendiary jam solo. Sit back, crank the volume and get lost in this operatic incarnation of genres combined in the name of invention. 9.3% ABV

Liefman's Goudenband
Liefmans Goudenband is one of the most distinctive dark beers in the world. Made in open vats with beer of mixed fermentation, it is left to mature for four to 12 months in the cellar. Mature beer is then fortified with younger beer, so the fermentation process starts up again.
Liefmans Goudenband is a beer for storing, and just keeps improving over the years like a fine wine. Even after ten years, this dark red beer tastes as fresh as ever. You'll immediately pick up on the wonderful aromas of caramel, apple, rhubarb, cherries and malt. On the taste buds you will find hints of apple and cherries, combined with woody notes, while the aftertaste hints at nuts and dried raisins. Brewery Ommegang Announces 4th Game of Thrones Beer - Valar Morghulis

In the world of Westeros, Valar Morghulis means "all men must die." Fans of the hit HBO show decided that "all men must drink" as well when they voted the foreboding phrase as the name of the newest beer in the Game of Thrones collaboration between HBO and Brewery Ommegang as part of a late December Facebook poll. The voting also determined the style of the new beer - an Abbey Dubbel - which is perfectly represented by the "two-headed" coin which will adorn the labels. Valar Morghulis will be available at retail in fall of this year.

Cigar City Homefront IPA to be Released on May 28th

Homefront IPA was developed in 2011 by Fremont Brewing Company and Center of the Universe Brewing Company in order to raise money and awareness for Operation Homefront. Operation Homefront is a charity that provides emergency assistance to military heroes and their families. Aged on Louisville Slugger maple bats, this IPA does more than just quench your thirst; it improves the lives of our soldiers.
Homefront IPA is a unique charity beer in that 100% of the proceeds are donated to Operation Homefront. With the help of 6 participating breweries and other organizations that donated the hops and grains used to make the beer, Hops for Heroes was able to raise roughly $80,000 dollars for Operation Homefront in 2013.

Ginger Beeraritas
(For a pitcher)

INGREDIENTS:
2 cups ginger beer
1 cup lime juice
1/3 cup tequila
1/4 cup grand mariner
1/4 cup ginger simple syrup
Directions:
Mix all the ingredients in
a pitcher, give it a good stir and pour over ice into frosty glasses and top with a lime wedge.
Ginger Syrup:
To make the ginger syrup, add the water, sugar and ginger to a small saucepan and heat over medium heat. Whisk constantly until the sugar dissolves and the mixture begins to bubble. Let it simmer for a minute or two then remove it from the heat and allow it to cool completely. You can store this sealed in the fridge for a few days. Just make sure not to pour the ginger into your glass!

Backyard Burgers with Fried Tomatoes and Garlic-Dill Beer Cheese
(Makes 6 burgers)

INGREDIENTS:
For Garlic Beer Cheese:
8 oz. sharp cheddar (grated)
8 ox. mild cheddar (grated)
8 oz. cream cheese at room temp.
1-2 garlic cloves, minced
2 tblspn. fresh dill, chopped
1/4 cup scallions, sliced
1/4 cup sweet onion, minced
1 tspn kosher salt
1/2 tspn coarse pepper
1/4 tspn cayenne pepper
1/2-3/4 cup beer
For Fried Tomatoes:
2 very firm yellow or green heirloom tomatoes, sliced in 1/2 in. thick rounds
1 cup all-purpose flour seasoned w/ salt and pepper
1 egg, well beaten
1 cup panko bread crumbs
3 tblspn vegetable oil
For the Burgers:
24 oz. freshly ground chuck
salt and pepper
For Assembly:
6 Brioche buns, lightly toasted
2 red heirloom tomatoes, sliced into 1/2 in. thick rounds
A few handfuls of arugula
6 strips cooked bacon
Directions:
Beer Cheese:
Place the cheddar cheeses and cream cheese in the bowl of a stand mixer fitted with the paddle attachment. Mix on medium-high speed until well combined. Add the garlic, dill, scallions, onion and seasoning and mix to combine. Slowly add the beer in a steady stream with the machine running until mixture is well combined and spreadable. Transfer to an airtight container and refrigerate until ready to use. Allow to come to room temperature before serving.
For Fried Tomatoes:
Set up a three step breading station. Dredge the sliced green tomatoes in the seasoned flour, then the egg, and finally in the panko. Heat the vegetable oil in a non-stick skillet and pan fry the breaded tomatoes over medium high heat until golden brown on both sides (about 2 minutes per side). Season tomatoes with salt and set aside.
For Burgers:
Prepare a charcoal grill for direct heat grilling and allow flames to die down for 30 minutes before cooking the burgers.Working quickly, shape the meat into six, 4-ounce patties that are each about 3/4-inch thick. Season the patties liberally with kosher salt and pepper on both sides just before cooking. Grill 4-5 minutes per side until just a blush of pink remains in the center. Transfer the burgers to the toasted buns. Top each burger with a tablespoon or two of homemade beer cheese, a fried tomato, a slice of fresh red tomato, a strip of bacon and some arugula.
