We've got Little Things in Store 

We have American Craft Beer Week, South Florida Beer Week, Tampa Bay Beer Week, Jacksonville Beer Week and after being down in Key West for the beer festival on Labor Day, I am sure we are headed to Key West Beer Week soon too. Beer weeks are fun and give the whole community an opportunity to experience different beers, beer pairings, unique products from National and Local Breweries and on and on... but this upcoming week is different from all other "Beer Weeks". It is Gnome Week! Gnomes are mystical creatures that date back hundreds of years in lore... What do they possibly have to do with beer?

Brasserie d'Achouffe was founded in the 1970s by Christian Bauweraerts and Pierre Gobron in the quaint village of Achouffe, Belgium. Belgium, being long known for the quality of its unique style of beer, hadn't seen a new brewery open in ages much less one that could produce the quality of the beer that the Brasserie does.

The legend goes that there was a colony of gnomes who once brewed enough beer to keep the entire nation of Belgium drunk year 'round. The beer flowed from a spring in the woods that was once the secret meeting place of the Knights of Templar and also became known as the Valley of the Fairies.

Years later the area was devastated by plague and collapse, thus the goblin brewery was destroyed. The lone survivor, a goblin named A'Chouffe visited the brother-in-laws and imparted the recipe of the classic golden La Chouffe to them. They have included his image on every bottle ever since. Join us this week for some fun events that celebrate the Gnomes who have passed down this recipe and kept it alive for us to enjoy. They brew some great beer and there will be lots of fun gnomes floating about in their red gnome hats all over town... Will you catch one near you?

Ommegang Games of Thrones: Take the Black Stout 
Take the Black Stout is brewed with a robust amount of specialty malt, chocolate malt, Midnight Wheat and roasted barley. Balanced hopping includes Northern Brewer and Columbus; spiced with licorice root and star anise. It has a deep black, almost opaque, hue with a full tan head. Deep aromas of dark chocolate, caramel malt and earthy hops, with light roastiness and a touch of fruitiness. Clean hop bitterness joins with a slight woody character and spiciness. Rogue Beard Beer 
It's here! The latest brew Dedicated to Beards, Beard Beer is brewed with a yeast created from Brewmaster John Maier's Beard. No Need to freak out, Brewers have used wild yeasts in beer making for centuries. John has had the same Old Growth Beard since 1983 and for over 15,000 brews, so it is no great surprise that a natural yeast ideal for brewing was discovered in his beard. 5.6% ABV
Shmaltz and Terrapin Collaboration: Reunion Ale '13 
Brewed for Terrapin's dear friend, Virginia MacLean, a woman who died of Myeloma in 2007. All proceeds to this annual collaobration go to the institute of Myeloma and Bone Cancer Research (imbcr.org). This year's beer is a dark ale brewed with cinnamon with vanilla, coffee, and cocoa nibs added. It was inspired by a fantastic dessert that they used to share with Virginia at their favorite restaurant. The brown ale leads with a bold coffee and subtle cinnamon aroma. Complex malt overtones quickly give way to a chocolate, coffee, and vanilla mix of satisfying bliss. 
Cigar City Poblano Wit 
Cigar City's Pro-Am beer they are entering into the GABF this year.  A Belgian-style wit made with poblano peppers. 6.8% ABV 
Cisco Island Reserve Tripel Ale 
Third in the Island Reserve Series, the Tripel is a rich and spicy brew with notes of honeysuckle and geranium! Aroma: Pepper, honeysuckle, Geranium, tropical fruit. Taste: rich malt, spicy hops, dry mineral finish. 9.5% ABV 
Cisco Island Reserve Double IPA

Sour Wheat Beers: American Innovation Meets Old World Invention

Pale, tart and crisp-sour wheat beers are some of the least alcoholic and most refreshing beer styles. Although these styles are not brewed in the capacity that they once were, they have seen a mini revival in the past decade-especially in the U.S.-where some craft brewers have not only adopted the traditional German and Belgian brewing methods, but also modernized them with the addition of interesting herbs, fruits and spices.

 

As you can probably infer, what makes sour wheat beers different from their non-sour counterparts is the use of souring agents including Lactobacillus and wild yeast, or a combination of both in the fermentation process. Made with a blend of pale malted barley and wheat, sour wheat beers tend to be extremely low in alcohol with a lemony, almost yogurt-like tartness and can sometimes be a bit funky.

 

Although most Americans today enjoy these styles of beer on their own, in the past, they were all often served with flavored syrups, fruit purees or some kind of sweetening agent to cut their tartness. In fact, many of them are still served this way in Europe.

 

It is important to note that sour wheat beers are not exclusive to any particular group or heritage, many variations abound, but the purpose of this post is to look at three specific styles: Berliner-style weisse, Leipzig-style Gose and the Belgian-style lambic.

The Latest Trend in Beer: Farm to Foam

Pouring a pint of Rogue's Seven Hop IPA, it's easy to forget this simple fact: Beer begins in the dirt.

 

Getting the beer into the glass involves boiling grains, pitching yeast and fermenting the brew, but the raw ingredients-barley and hops-have to be grown too. And while a large, mainstream beer maker might purchase all its ingredients from far-flung growers, a growing number of smaller breweries are turning to local farms for barley and hops.

 

The Oregon-based craft brewery Rogue takes things a step further, doing the farming themselves. The beer maker grows seven varieties of hops on its 42-acre farm on the Willamette River, south of Independence, OR-hops that appear in more than nine of Rogue's brews. Additionally, the farm produces different grains and flavoring ingredients, like pumpkins, honey and chiles, which are used in Rogue beers.

 

Beer expert Lucy Saunders, whose upcoming cookbook Dinner in the Beer Garden will feature plant-based recipes paired with craft beer, says Rogue is leading a national trend toward beer that isn't just brewed locally, but is made from local ingredients too.

Perfect Day
(Compliments of Park Restaurant in Cambridge; goes particularly well with bacon dishes!)

 

- 2 oz Mezcal Tequila 

- 1 oz Grapefruit Liquer 

- 1.5 oz Ommegang BPA  (Belgian Pale Ale) 

- Dash of Bitters
- 1/2 oz lemon juice

Add all ingredients to mix in a shaker. Shake and serve in a collins glass with a cherry and a small slice of orange.

Beer Brined Scallops over Smokey Corn Puree and Stout Molasses Sauce

A way to show off to your friends that you can cook fancy, and using beers two ways in the process!

Yield:
12 scallops
Level:
Medium

Ingredients

 

For the Scallops:

- 12 ounces pale ale

- 2 tbs salt

- 1 cup water

- ¼ cup lemon juice

- 12 jumbo scallops

- 2 tbs unsalted butter

-2 tbs olive oil

 

For the Corn Puree:

4 ears of corn

5 tbs butter

¼ tsp salt

½ tsp black pepper

1/4 tsp smoked paprika

1 cup cream (or half and half)

 

For the Sauce"

- 1 cup stout or porter with hints of smokiness 

- 1 tbs molasses (don't use Blackstrap)

- 3 tbs balsamic

- 1 tbs soy

 

Directions:

 

In a large bowl stir together the pale ale, salt, water and lemon juice.

Add the scallops, cover and refrigerate for 1 hour.

While the scallops brine, make the puree. Cut the kernels off the corn cob, set aside.  

 

In a saucepan over medium high heat, melt the butter. Add the kernels, salt, pepper, smoked paprika and cream. Allow to simmer until corn has softened, about 8 minutes. Add to a blender or food process and process until smooth, about 5 minutes. Pass through a fine mesh strainer.

 

Make the sauce: Add the stout, molasses, balsamic and soy to a sauce pan over high heat. Bring to a boil, reduce heat to maintain a strong simmer, cooking until reduced and slightly thickened, about 10 minutes (should easily coat a spoon).

 

Remove the scallops from fridge and place on top of a stack of 4-5 paper towels. Add another layer of paper towels and allow to drain and dry for 15 minutes. Sprinkle with pepper on both sides.

 

Add the butter and olive oil to a pan over high heat. Allow the butter to melt and get very hot, nearly smoking.

Add the scallops, flat side down, and allow to cook until a dark golden brown crust forms on the bottom, about 2 minutes. Flip and cook until seared on the opposite side.  

 

Remove from pan when a slight hint of translucent pink still remains at the center, don't over cook.

 

 Serve  scallops over the puree and enjoy!
