Now that July 4th is over and the doldrums of summer are kicking in full force, what do we have to do until Labor Day. Of course! Belgian Independence Day!! We may not be in Belgium but we can sure drink and party like we are. So what exactly are Belgians celebrating? It certainly wasn't breaking from British rule....rather breaking from the rule of the Netherlands. You see the Dutch were always trying to make the Belgians drink bland Dutch lagers and the Belgians were like "Hey Duvel and Orval are soooooo much better! We are not putting up with this!!" LOL...just kidding. Actually the Dutch ruled over the larger Belgian population and controlled economic, political and social institutions of the Belgians. They obviously didn't like that. I really think they liked their beer better though.
Anyways, we have lots of great events going on in the coming days leading up to July 21st and we have lots of great Belgian beers to drink while celebrating the Belgian Independence from the Orange. Just think that this break could be considered the one that seeded the American craft revolution as many of our own craft brewers have been inspired by Belgian beer and the great flavors and styles from Abbey Ales to Lambics to Guezes. So raise a toast to those fun and crazy Belgians...maybe they just had something in mind when they broke away that changed the course of beer over the centuries. It has certainly played out quite well for us over here.

What was once just a trend is now a full-blown, happening movement that's swept the country: craft beer. Ask just about anyone with an of-age license and taste buds, and people will have an opinion about who makes the best beer around. And despite the fact that craft beer still makes up just less than 7 percent of the total beer market in the U.S., the number of craft breweries has imploded in just the past decade: now at 2,360 operating breweries in 2012, according to the Brewer's Association.

Do you recognize the name Jack McAuliffe? How about Fritz Maytag? You may already be familiar with Dogfish Head's Sam Calagione, or Brooklyn Brewery's Garrett Oliver, or Beer Hunter Michael Jackson, or Boston Beer founder Jim Koch. These are just some of the characters whose actions, inspirations and efforts contributed to making American the craft beer Mecca it is today.
The more than 2,500 craft breweries operating across the country didn't sprout overnight - though they are now popping up at an astonishing rate, thanks to the current fertile conditions - and the nearly 10 percent of the U.S. beer market (by dollars) that craft beer has captured was not won without a fight.

Strawberry Belgian Waffles with a Liefmans Fruitesse Reduction

Celebrate Belgian Independence Day with these decadent Belgian Waffles served with a Liefmans Fruitesse Reduction.
Ingredients:
For Waffles
-2 eggs
-2 cups all-purpose flour
-1/2 cup buttermilk
-1 cup milk
-1 Tablespoon white sugar
-4 teaspoons baking powder
-1/4 teaspoon salt
-1/2 teaspoon vanilla extract
-Strawberries, sliced
For Liefmans Fruitesse Reducation Sauce
-12 ounces of Liefmans Fruitesse
-2 Tablespoons sugar
Directions:
For Waffles:
Preheat Waffle Iron
Combine eggs, milk, buttermilk, and vanilla extract in bowl. Blend until combined.
Combine sugar, baking powder, flour, and salt.
Mix dry ingredients with wet ingredients until well constituted.
Spray preheated waffle iron with non-stick cooking spray.
Pour mix onto hot waffle iron.
Cook until golden brown.
Top with strawberries and sauce and serve hot.
For Liefmans Fruitesse Reducation Sauce:
Combine beer and brown sugar in a medium bowl.
Add to a skillet set on medium heat and cook until the mixture is slightly syrupy and reduced to about ¼ cup.
