March 15, 2013

I have an admission to make. I don't drink a lot at home. I never have. Occasionally, a beer while I'm cooking dinner or with dinner but I have never been a person who will drink 2 or more beers on a regular basis when I am just hanging at the house. Sure, if I have friends over for a get together or I am watching the game a couple of brews will surely be downed but that is more the exception than the rule. I drink more beers when I am out at a bar or restaurant. There are plenty these days selling great beer.

So when I went into my beer fridge the other night to grab a beer...I sat looking at a bunch of 22s and 750s staring at me that I have been sitting on for a while. Fortunately, they are all beers that age very well but it got me to thinking about my collection that has gotten enormous and what I am going to do about it. I mean I can't singularly drink all of this beer by myself. These beers are not meant for this anyways. They are meant to be split with someone.

Recently, I have been hearing about bottle share parties. Bottle shares are meetings of like beer minded friends getting together and pulling out the rarities and fun stuff from their collections that typically come in more than single serve sizes and sharing them. You see, beer has always been a point of socializing for me and a bottle share party is the perfect way to get to enjoy some great beers and spend some time with some great friends. So I am going to dig into my collection and put a list together. Find a date that works and call all my friends and see what they have been sitting on (beer wise that is!). Then put together an evening of food and beer so that we can all enjoy each other's company and share in some great beer. Sounds like fun doesn't it! When are you going to plan your "bottle share party"?

Coronado Idiot IPA

Coronado Mermaid's Red

Coronado Orange Avenue Wit

Pyramid Discord Dark IPA

Discord Dark IPA celebrates the marriage of two distinct styles, the Dark Ale and the IPA. The traditional bitterness of an IPA is juxtaposed against a black malt canvas, creating an ale that keeps your taste buds working to discover all the unique flavors imparted by the 5 differed hops and 5 different malts. 6.5% ABV (bottle only)

Due South Island Hopper Double IPA

This double IPA is for the hophead at heart. They use an insane amount of 6 different varieties of hops in this beer. It is then dry hopped ever more afterward. The outcome is a very hoppy double IPA that is fresh, citrusy and resiny. Think West Coast style brought over to the East Coast of Florida. 8.5% ABV (draft only).

Dogfish Head / Sierra Nevada Rhizing Bines

Deeping their bond with Sierra Nevada Brewing Company forged with the 2009 collaboration Life and Limb, Dogfish Head has brewed an East-meets-West Imperial IPA. On the hot side, Rhizing Bines went through Dogfish's signature continual-hopping process with floral and citrusy Bravo hops. On the cold side, it was dry-hopped with an experimental varietal so new it doesn't have a name yet, just a number. Hop 644. A component of Sierra Nevada's aroma-boosting Torpedo system made a pit-stop in Delaware for dry-hopping duty before it headed to Sierra's new North Carolina brewery. To celebrate Sierra Nevada planting East Coast roots, Dogfish Head tracked down a Carolina heirloom wheat grown and milled at Anson Mills. The soft red winter wheat contributes subtle sweet and nutty notes to this hop-forward ale. It has two hop varietals, two yeast strains (Chico and Doggie), two unique hopping processes and two family-owned breweries. These bonds start at the root - or rhizome - and stretch throughout the mature bines. 8% ABV (bottle and draft)

Cigar City / B. Nektar Camp Braggot Ghost Stories

This collaboration between CigarCity and B. Nektar Meadery is a Braggot (fermented from both barley and from honey) that was brewed with lager yeast, making it a truly unique experience. The honey used for the mead portion is Meadowfoam, which is most notable for its huge marshmallow flavors. They also added some chocolate, coconut, Chinese black smoked tea, and a touch of white oak as well. 10% ABV (bottle only)

Ballast Point Sea Monster

From the deep, dark depths of the Brewmaster's imagination comes this rich and monstrous oatmeal stout. The Sea Monster embodies all that the true dark beer aficionado will appreciate: roasted coffee notes, with hints of bittersweet chocolate and currant flavors all brought together by a perfect hop balance. Don't fear the Monster! 8% ABV  (bottle and draft)

Ballast Point Victory at Sea

Two of the world's oldest beverages join forces to conquer your palate. Victory at Sea embodies the art of masterful brewing by infusing a velvety Imperial Porter with pure vanilla flavor and specially-selected, hand roasted coffee. The addition of cold brewed coffee to the beer lends a subtle roasted flavor to this robust imperial porter, blending perfectly with rich vanilla and caramel undertones. By uniting two San Diego brewing traditions, Caffe Calabrian freshly brewed coffee and Ballast Point beer, they have successfully created an artisanal masterpiece. 10% ABV (bottle and draft)

Pyramid Weiss Cream Ale

Brewed with orange peel and vanilla, then nitrogenated to provide an extra smooth mouth-feel, Weiss Cream serves up a creamsicle like flavor worth sharing with friends. 5.2% ABV (draft only)

BEER NEWS

In the USA there have been several unique and distinctive beer styles that have emerged over the past 70 years. American-style light lager with their low calorie and colored derivations has been the most copied and popularized throughout the world. These beers are defined by their high corn, rice, sugar adjunct content, and low malt and hop taste profiles along with "refreshing" higher carbonation. Their presence has been both dominating and ubiquitous. But times are changing.

Over the past 30 years innovative craft brewers in the United States have created many beer types that at the time defied categorization as European styles. The popularity of these "America-style" beers has grown both in the USA and internationally. What has defined these styles and why did they emerge? Here are a few select examples of how both culture and access to ingredients helped to define new directions in beer character.

We've seen our fair share of beards behind the bar at craft breweries, but we never realized how intrinsic they are to beard culture, at least according to CraftBeer.com.

The website recently asked Brewers Association members to submit pictures of their "righteous stache, goatee, dali, old dutch, soul patch or just a simple beard" for a Facebook contest in which fans were given a week to "like" their favorite. The list has been whittled down to a glorious 20 individuals, all of whom have made a final case as to why they've earned bearded supremacy.

Our favorite facial hair includes the 'stache rocked by Jonathan Mervine of Roc Brewing Co. in Rochester, N.Y., because it reminds us a bit of Snidely Whiplash, and the Dali-esque one worn by Miles Anfinson of Lewis & Clark Brewing Company in Helena, Mont.

In a simpler era of brewing, beer was composed of just four core ingredients. Armed with water, hops, grain, and yeast, brewers created a range of unique ales and lagers, from bitter India pale ales to chocolaty stouts as dark as December night. But as the craft beer movement continues to grow and evolve in America, madcap brewers have begun to explore the far fringe of flavor.

Bacon-Stout Chocolate Cheesecake
By: Laura @ Tide & Thyme

This bacon-stout chocolate cheesecake by Tide & Thyme features a pretzel and graham cracker crust supporting a rich, dark chocolate and espresso filling. Finished off with homemade whipped cream and beer-candied bacon, this is a seriously decadent dessert.

Ingredients:

Crust:

-4 standard sized graham crackers
-1 cup pretzel rods
-2 Tbsp granulated sugar
-6 Tbsp butter, melted

Filling:

-7 oz dark chocolate
-1 cup stout
-3 (8 oz) packages of cream cheese, softened
-1 1/4 cup sugar
-3 eggs
-2 tbs flour
-1/3 cup cocoa powder
-1 tbs espresso powder
-3/4 cup beer-candied bacon, finely chopped

Topping:

-2/3 cup hot fudge sauce
-1/2 cup beer-candied bacon, finely chopped
-1 cup heavy cream
-2 Tbsp granulated sugar

Directions:

Place one over rack in the middle position, with one rack below.

Preheat over to 350 degrees F.

Crust:

In a food processor add the graham crackers, sugar, and the pretzels and process until it's the consistency of crumbs.

Turn the food processor on, and slowly stream in the butter and process until it resembles wet sand.

Spray the inside of a 9-inch spring foam pan with non-stick cooking spray.

Pour the processed crumbs into the spring foam pan.

Using the bottom of a heavy, flat bottom glass, press the crust very well into the bottom of the pan until well compacted.

Filling:

In a pot over medium high meat, add the beer and the chocolate, stir until melted and remove from heat.

Allow to cool.

In the bowl of a stand mixer fitted with a paddle attachment, add the cream cheese and the sugar and mix until smooth.

One at a time, add the eggs, scraping the bottom of the bowl between additions.

Pour the cooled chocolate into the mixer and beat until well combined.

Lift the head of the mixer and add flour, cocoa powder, espresso powder, and bacon over the batter, stir on low speed until just combined.

Pour the batter into the pan over the crust.

Place the pan in the over in the middle position.

Place a baking dish on the rack below the cheesecake, fill with water.

Bake the cheesecake until the center no longer jiggles when you shake the rake, about 45-50 minutes.

Remove from oven.

Topping:

For the topping, warm your hot fudge sauce so that it is pourable.

Pour onto the center of the cheesecake carefully, and allow to sit and solidify for 15 minutes.

Top the chocolate with the chopped bacon.

In the stand mixer fitted with a whisk attachment, whip the whipping cream until soft peaks form.

Add the sugar, and continue whipping on high until stiff peaks form.

Place in piping bag fitted with decorative tip and pipe border of whipped cream around the edge.
