Is it Spring yet? Here in Florida it is hard to tell when Winter ends and Spring begins. While the rest of the country is still under a blanket of snow and cold weather, we bask in the mild temperatures of the Tropics. Only once in a while do we dip back into cold temperatures that most northerners would consider a mild Summer night. So the topic I defer to is what will you be drinking this time of year? It is hardly cold enough to be drinking a high ABV Russian Imperial Stout (at least until Saturday with the temps dropping back to the 50s). But it certainly isn't warm enough to be focused on Kolschs and Hefeweizens although those are pretty good go-to beers all year round down here. Now is the time for a good spicy saison or a nicely hopped pale ale. A beer that isn't too heavy, slightly refreshing, and has a ton of interesting delicious flavors. A beer that won't weigh you down or warm your cockles...just give you that pleasant experience of the rebirth of spring. So check out the Spring beers that are starting to appear on the shelves now and if you still want some dark delicious Winter beers...get them now before they sell out!

.75 oz White Chocolate Liquor
Sake and strain the first two ingredients into a chilled cocktail glass
Float .75 oz Coffee Liquor on top of the mixture.
Dry shake 2 oz of Samuel Smith Organic Chocolate Stout for about 60 seconds and pour on top of that mixture. And enjoy!

Amber Ale Arroz Con Pollo By: Mike Burns This is a take on the classic Cuban dish Arroz con Pollo. The rice is layered with flavor provided by fragrant spices as well as chicken and chorizo. Ingredients:
For Marinade:
-3 lrge garlic cloves, chopped
-2 Tbsp white vinegar
-2 teaspn dried oregano
-4 chicken drumsticks
-4 chicken thighs
For Rice:
-3 oz chorizo cut into 1/4 inch think slices
-1 Tbsp olive oil
-1 medium onion, diced
-1/2 green bell pepper, diced
-3 garlic cloves, chopped
-2 teaspn ground cumin
-2 teaspn dried oregano
-1 1/2 teaspn paprika
-2 bay leaves
-1 lb tomatoes, seeded and chopped
-1 bottle of Twisted Pine Amber Ale
-1 1/2 cups chicken broth
-2 cups white rice
-1/4 cup cilantro, chopped
Directions: Finely chop garlic with 2 teaspns salt, then transfer to a bowl. Whisk in vinegar and oregano. Remove skin and excess fat from chicken, then toss with marinade until coated and chilled, at least 1 hour but no longer than 2 hours. Render chorizo by cooking in large pot over medium-high heat, stirring, until some fat has been released, 2 to 3 minutes. Add olive oil, onions and bell pepper and cook, stirring, until softened, about 5 minutes then add garlic and cook until fragrant. Add cumin, oregano, paprika, 1 1/4 teaspn salt, and bay leaves and cook, stirring, 1 minute. Reduce heat to medium then add chicken and marinade to the pan and cook while stirring, uncovered for 10 minutes. Stir in rice and cook for another minute. Then add tomatoes, beer and chicken broth. Bring to boil, making sure rice is submerged. Then cover and reduce heat to medium-low. Cook, stirring halfway through, until rice is tender, 20 to 25 minutes. Remove from heat and let stand, covered, 5 minutes. Fluff rice, remove bay leaves, garnish with chopped cilantro and serve. _______________ |
