Apple Bars

Ingredients:
2 cups all-purpose flour
1 cup salted butter
1/2 cup regular rolled oats
1 cup firmly packed brown sugar
1 cup water
1 cup granulated sugar
3 tablespoon cornstarch
1 teaspoon vanilla extract
2 3/4 cups quartered and sliced apples
Preparation:
Preheat the oven to 350ºF. Grease a 9x13 inch baking pan. In a large mixing bowl, combine the flour, butter, oats, and brown sugar. Mix well with a sturdy spoon. Press 3/4 of the mixture into the prepared pan. In a saucepan, heat the water and granulated sugar over medium heat, and bring to a boil. Dissolve 1 tbs of the cornstarch in 2 tbs cold water; mix this slurry into the sugar mixture, and stir in the remaining cornstarch. Stir until the mixture thickens, and remove from the heat. Add the vanilla and apples. Spread this evenly over the mixture in the pan, and top with the remaining oat-flour mixture.
Bake for 40 minutes, or until the top is evenly browned.

The Blue Plate Special, a term coined for an 1882 menu, featured trencherman's portions served on blue patterned china. The term "blue plate special" was used throughout the country to mean large portions of excellent food at reasonable prices.
