 We recently "harvested" our two grass fed Angus steers and the meat is now for sale.
The steers were raised on pasture and rangeland on the Hausna Valley Farm, located about 12 miles east of Arroyo Grande.
No corn or other supplements were fed to the steers. No antibiotics or hormones were used.
They were harvested by J and R Meats in Paso Robles, USDA inspected, hung for 2 weeks of aging, and each cut wrapped in individual vacuum sealed bags and frozen.
20 shares are available at $200 per share.
Each share is approximately  25 pounds of beef.

The following is what one share will include:
1 package ( approx. 2.5 # ) back ribs or rump roast or shank
2 packages ( approx. 1.5 # total ) skirt steak or chuck steak
1 package ( approx. 2.25 # ) brisket or bottom round
2 packages ( approx. .5  # total ) flat iron steak
1 package ( approx. 1 # ) carne asada
1 package ( approx. 1 # ) short ribs
2 packages ( approx. 1.5 # total ) rib eye steak
1 package ( approx. 1 # ) top sirloin steak
2 packages ( approx. 1 # total ) new york steaks
3 packages ( approx. 1 # total ) new york filets
1 package ( approx. 1 # ) stew meat or ball tip
1 package ( approx. 1 # ) sausage...sweet italian or bratwurst
10 packages ( approx. 10 # total ) ground meat 


 Trying to divide up the meat from 2 steers into 20 shares...entailed that some  "cut" options must be given for the counts to come out even. You may not necessarily have a choice of one or another where the package is listed "or", but you will get one of the options listed on that line. 
We may have some extra cuts that we will sell as individual packages at the farm stand...but at this time I can't guarantee what we will have extra, if anything.
Being "grass fed" beef, you will find that the cuts are much leaner than conventional beef found in the stores.  My experience is the beef is more flavorful and you will tend to eat smaller portions while enjoying the rich flavor and health benefits of non feed-lot raised beef.  I have found that by using slower cooking methods and keeping the beef rare to medium done will keep them from becoming overly "chewy". 
We will have each share packed in a box, frozen, and ready for your pick up at our farm stand this coming Friday, Nov. 2.  I don't have any long term storage ability at the farm, so I am hoping to sell all 20 shares this one day.
