The Dessert Trends Workshop Agenda is truly a "work of art"!
 
Beginning Friday afternoon, October 16, with an update from industry is
Kami Smith, Certified Executive Pastry Chef from Dawn Foods, the event continues with a fun Wisconsin cheese and chocolate pairing exercise by Chefs Bernd and Armin Gronert, pastry instructors from the Culinary Institute of Charleston.
 
Saturday Chef Daniel Pliska, Certified Executive Pastry Chef will lead off with "What's Old is New Again," remakes and remar
kable adaptations of signature desserts and pastries.  
This will be a hands-on lab following Chef Pliska's pr
esentation.
 
Next up:  Chef Kelly Wilson, CEPC, will present on the "Sweet Side o
f the Street,"  a description and hands-on practice time looking at street foods and food truck fare...a real trend throughout the U.S.
 
Sunday, Chef Claire Chapman from the renowned Peninsula Grill, will delve into blurring the line between sweet and savory by incorporating different vegetables, cheeses, herbs and salt into composed desserts.  Again, participants will have the opportunity to work in the kitchens alongside the chef.
 
The 
weekend finishes Sunday afternoon, October 18, with Chef Kelly Wilson demonstrating the new ways that restaurants all over are practicing sustainability and locavorism by canning those wonderful, locally grown fruits and vegetables and featuring them on their menus.
 
BONUS:  If you wish to have a day-long hands on workshop learning about artisan breads, we have that option too!  Attendees would begin on Friday morning and finish in time for the late afternoon's sessions.
 
Attendees will earn ACF continuing education hours, go home with a new tool kit and chef jacket plus recipes and techniques that are adaptable to their classrooms.
