Welcome back to school!!  I hope that everyone had some restful time this summer.  It's time toplan for your professional development options for this school year!
 
CAFÉ is proud to launch the 2015-2016 School Year by offering a hands-on workshop, "Dessert Trends," October 16-18, 2015, at the Culinary Institute of Charleston/Trident Technical College.
 
This event is geared to baking/pastry/culinary instructors who want to expand their knowledge in what's trending in Desserts nationwide.
 
One of the featured presenters is Chef Daniel Pliska, CEC, AAC, Executive Chef of the University Club of MU, and author of "Pastry & Dessert Techniques."  He will present, demonstrate, and supervise hands-on lab work on the topic of "What's Old is New Again."
 
Signature desserts and pastries are more popular than ever!  Even amidst the current age of molecular gastronomy and world cuisine, one thing remains certain-all great desserts and pastries are based on fundamental techniques and proven formulas.  In this seminar, Chef Daniel will share several techniques and formulas, along with advice from some of the country's top pastry chefs, for building signature desserts based on time-honored techniques and formulas.

BONUS EVENT IN CHARLESTON!!!

On Friday, October 16, Chef David Vagasky, CWPC of the Culinary Institute of Charleston, will lead a hands-on class on The Art of Artisan Breadmaking.  There is an additional registration for this one-day event, which will lead into the Dessert Trends weekend.

CALIFORNIA STRAWBERRY CONTEST
 
There are thousands of signature strawberry items on menus waiting to be discovered, according to the California Strawberry Commission.  So the Commission is asking foodservice professionals to take a photo of their favorite strawberry dish to share with the Commission.
 
Simply take a photo of the strawberry item, then email it to strawberryspotting@californiastrawberries.com Be sure to include your name, mailing address, the name of the dish, and the name of the restaurant.
 
You can also post your photo using #strawberryspotting.  Your prize?  Each month through October 30, 2015, the Commission will select a favorite photo, publicize it on the website and in their operator newsletter AND send a "berry" nice gift in appreciation.
 
This could be a fun project with your students!  Be sure to tell the Commission that you heard about this from CAFÉ!
