Bay State Milling Co., is gathering information about artisan baking in America via a brief survey designed for pastry chefs and bakers. Participants who complete the survey may select to receive a copy of Chef Ciril Hitz's book "Baking Artisan Pastries" - all surveys must be completed by May 15, 2015.
