Christian De Vos, former Culinary Dean of Kendall College and currently Vice President of Food & Beverage for Delaware North Parks and Resorts division will be a speaker on our Industry Outreach Day during CAFÉ's 11th Annual Leadership Conference in Niagara Falls, New York, June 18-20.

 

Delaware North chefs operate some of the busiest and most famous kitchens in the world.  They are given the freedom to create dishes using fresh, local ingredients and exotic flavors.

 

Delaware North operates foodservice in a variety of industries:  gaming, sports, parks, resorts, travel hospitality, restaurants and catering and specialty retail.  They can be found in Australia, New Zealand, North American and the United Kingdom.

 

Christian De Vos heads up a division with more than $2.6 billion in annual revenue which employs more than 55,000 employees.

 

Prior to working with Delaware North, De Vos served a six-year term as dean of the School of Culinary Arts at Kendall College in Chicago.  He was responsible for leading and supervising a staff of 17 full-time chef instructors and 300 full-time students.  De Vos completed his undergraduate work at Ecole Hoteliere de Namur in Namur, Belgium, and subsequently graduated from Loyola University with a master's degree.

 

The theme of the conference is "Energizing our Classroom" which will be addressed in a variety of inspirational ways throughout the event.

MASTER CLASSES

 

CAFÉ is offering three Master Classes on Thursday afternoon, June 18th, from 1-4 p.m., preceding the opening night reception.


 

  • "The Skill of Teaching Culinary Math"  by Cathy Scruggs from American Technical Publishing
  • An afternoon of wine tasting and cheese pairings by Sara Hill from the Wisconsin Milk Marketing Board and Niagara Culinary Institute's beverage instructor and sommelier, Kurt Guba.
  • Hands-on Meat Fabrication Class taught by Chef David Bottagaro from the National Pork Board.

Sign ups for these classes are first-come, first-served.  You'll finish up by 4 p.m. in plenty of time for that evening's reception.
