Many culinary programs in the U.S. have limited time allotted to hands on instruction.  We have been fortunate to have Chef Adam Weiner from JobTrain in California, address these challenges  in his monthly column in "The Gold Medal Classroom."

 

At the upcoming CAFÉ Leadership Conference in June, Chef Weiner will be giving a presentation on how to teach important culinary principles in 50 minutes.  One of the topics he will cover is sauces.  Each attendee of his break out session will receive an outline covering the topic and a suggestion on how to help students master the techniques involved.

 

Chef Weiner's presentation is one of the breakout sessions on the Educational Best Practices Day, June 19th.  Signups for the breakouts will be done at the opening night reception.

TRANSPORTATION FROM BUFFALO AIRPORT TO NIAGARA FALLS

 

You do not have to reserve your van ride to Niagara Falls prior to arriving at the Buffalo airport.  The cost is $24 and the van leaves on the quarter hour starting at 8:15 a.m. until 6:15 p.m.  The desk is in the baggage area.

 

If you wish to carpool with 3 -5 people, the cost is $70 and you can call for a reservation at 800-551-9369.  Remember, your destination is the Sheraton AT the Falls (on the New York side).  Believe it or not, there is another Sheraton on the Canadian side!

ARE YOU FAMILIAR WITH LIVETEXT?


LIVETEXT is a new CAFÉ partner and will be presenting at the Leadership Conference. Their topic will be on on-line assessment. We heard them speak in Chicago at the Deans and Directors Retreat and they can address specific issues that are important to accrediting agencies, such as the ACF requirements.

AWARDS/CONTESTS AND OTHER WAYS TO PAY FOR YOUR PROFESSIONAL DEVELOPMENT!

 

The Idaho Potato Commission and its annualInnovation Award recognizes programs and/or individuals who have designed a part of their program to be something different or something bigger than what was required.

 

The CAFÉ/Kendall College Green Award is an exciting boost each year to the many programs who have reached out to farmers or to new markets or to methods that all help us teach in a more sustainable fashion.

 

 

The (new) Sysco Educator of the Year Award is designed to recognize that individual who has gone above and beyond in their thinking, their energy, their devotion to foodservice education.

 

The (new) Unilever Foodsolutions Contest is recognizing that healthful food preparation is here to stay and we should recognize someone who can re-engineer a familiar recipe and then write a Lesson Plant to help other teachers with that same goal.
