HEALTH AND FOOD LESSON PLAN CONTEST FOR FOODSERVICE INSTRUCTORS

This Award is sponsored by Unilever Foodsolutions as part of their outreach in a "Seductive Nutrition" Challenge to remake familiar dishes to be more calorie/health consciousness and produce a classroom-friendly lesson plan in order to teach these principles.

Contestants are asked to provide:

• A recipe of a familiar dish/comfort food that has been "re-engineered" in both its use of product(s) as well as its method of preparation to produce a more healthful (seductive) menu item.
• Contestants will then take this menu re-do and create a Lesson Plan which could be used in any culinary program in order to teach the principles used in the "new" dish.

Guidelines:

• Recipe deadline (using a standardized format and with a photograph) is April 1, 2015.
• Contestants must use one or more Unilever product (e.g. Hellman's Mayonnaise; Knorr bases, Lipton Tea) which may be found by going to the website, http://www.unileverfoodsolutions.us/
• Judging will be based on how you can alter a dish to deliver the same if not better flavor while being better for you.  Each recipe should have a nutritional analysis comparison between the original preparation and the more "healthful" one.
• Recipes and Lesson Plans will be submitted electronically to marygpetersen@comcast.net with Seductive Nutrition in the Subject Line.  Please send all materials in one email along with instructor's contact information. (school, address, phone number(s), and email).
• Lesson plans should include:  learning objective, materials needed, time allotment, demo and practice activities, and evaluation method(s).

Winners:

• Grand Prize will be $1,000 plus a complimentary registration to the CAFÉ Leadership Conference.  The Grand Prize winner will:
  • o   Prepare the winning dish for the opening night reception, June 18, 2015
  • o   Present on the principles of the Challenge and Lesson Plan during the Trends presentation at the CAFÉ Leadership Conference (20 minute presentation), June 20, 2015
  • Two runners up will each receive complimentary registration to the CAFÉ Leadership Conference., June 18-20, 2015
  • Winner and runners up will be notified no later than May 1, 2015
  • Travel and hotel expenses will not be covered by these prizes.
