 CAFÉ's inaugural "Health and Food" seminar held in New  Orleans at Tulane University's School for Culinary Medicine  was a great success!

 

I have never witnessed such enthusiasm and passion and energy from a group of attendees-chefs, educators, doctors-all looking at how food will affect our future.  Here are a few comments on the takeaways from the weekend:

 

  • I have a new take on healthful eating, starting with the information about retooling our curriculum all the way to re-engineering popular menu items
  • I learned valuable tips on enhancing flavor.
  • It's important to de-emphasize the terms "health and nutritious" and just make it delicious!
  • There are tons of resources available for us to learn from and utilize
  • Nutrition is fun AND seductive!
  • Fun to work with a team to create a tasty, healthy meal
  • Get students more involved with community projects and have them act as the teacher
  • How this "trend" of healthy eating is NOT a trend anymore; it's becoming part of our culture
  • Networking with instructors from around the country was awesome!
  • We learned how to integrate "healthy/healthful" components into traditionally-taught curriculum
  • Farmer's Market Prescription Program...wow!  Including culinary medicine in a medical school...double wow!
  • And much more.

The speakers were terrific and all agreed that we can take these principles back to our own communities and start (or continue to build) dialogues.

 

Thank you to Chef Leah Sarris and Dr. Tim Harlan for hosting us in their brand new facility at the Goldring Center for Culinary Medicine.  Thank you to our sponsors and presenters who witnessed a transformation taking place over the course of the event.  The train has definitely left the station...all aboard!!

AWARDS FOR INSTRUCTORS

 

Important Awards are offered to our instructors which recognize their and their program's efforts in continuing improvement and setting new standards.

 

April 1, 2015 is the deadline for all Awards.  Go to http://cafemeetingplace.com/scholarships-awards for specific information.

 

The Idaho Potato Commission's Award for Program Innovation recognizes three winners with cash prizes as well as complimentary registrations to the CAFÉ Leadership Conference.

 

The Sysco Educator of the Year Award gives a cash award in addition to complimentary registration to the CAFÉ Leadership Conference to both a high school as well as a college-level instructor.

 

There will be new Awards/Contests announced here in the next two weeks.  So please pay attention and put them on your calendar.

 

You deserve to be recognized for all that you do!  We have corporate partners who believe in your efforts and look to support your contribution to the culinary arts education field.

DEANS AND DIRECTORS RETREAT

 

 

Put February 20-22, 2015, on your calendar as a must-attend event for postsecondary Deans and Directors.

 

The event will feature industry and education speakers.  This year's topic is "Measurements of Success" and we promise to bring you thought leaders on the topics of:

  • Building your vision/managing yourself
  • Building your team
  • Building your brand
  • Building an effective assessment program
  • Building your faculty
  • Re-building yourself
