OUTREACH PROGRAMS OF NOTE
At the upcoming "Health and Food" Seminar for foodservice instructors in New Orleans, October 17-19, 2014, there will be a panel of your peers who will describe some of their outreach programs already successfully in place.
You'll hear from the Dean of the Culinary Arts Program at Central Carolina Community College in North Carolina, Chef Gregg Hamm, who will discuss their Natural Chef Program which is offered to their students as well as to the public.
You will hear faculty members Jean Hertzman and Christine Bergman from UNLV in Las Vegas describe their Chefs for Kids Program.
And Chef Jamie Daugherty from Johnson & Wales University will describe their community outreach efforts in Denver.
The "Health and Food" Seminar will include presentations from your peers as well as from Master Chefs and medical doctors. What do they all have in common? The desire to start healing America by influencing present and future chefs. It goes way beyond a calorie count or an ingredient substitution.
I've heard it said that "food is another drug you put into your body." If that is true, then let's evaluate how we can lead the partnership of health and food by starting to change our curriculum and our approach to food choices and preparations.
