Did you miss our outline last week for the "Health and Food" Seminar in New Orleans?

 

Hosted by the Goldring School of Culinary Medicine at Tulane University, CAFÉ is pleased to be presenting a weekend devoted to issues in healthful eating as it relates to culinary arts programs.

 

 

Highlights of the event include:

  • An overview of Tulane's state-of-the-art program involving medical students learning the importance of diet and nutrition through hands on cooking externships
  • A panel presentation on innovative programs already in place in culinary programs in the U.S.
  • A hands-on exercise in meal preparations focused on re-tooling recipes
  • An interactive workshop on re-engineering curriculum
  • A presentation on effective ways to teach sensory analysis
  • Chef presentations on Seductive Nutrition and Marketing a Healthful Menu

The hospitality for the weekend includes a welcome reception on Friday evening, and lunches and breaks at the Goldring Center.  ACF continuing education units are included in the registration cost as well as each attendee will receive a knife kit and chef's jacket from Mercer Culinary.

 

The hotel block is at the Marriott Residence Inn the emerging Warehouse District and includes a hot breakfast.  The hotel deadline is October 1.  Don't delay as there are many activities going on that weekend in NOLA including a jazz festival very near the hotel!
